Salmon with Pesto and Feta
Seriously it doesn’t get easier or more delicious than this recipe for Salmon with Pesto and Feta.
This simple, three ingredient salmon recipe is like hitting the jackpot of recipes.
It’s a perfect weeknight meal, yet also fancy enough to serve at a fancy dinner party.
I make a ton of Homemade Basil Pesto in the fall when I have more basil growing than I know what to do with.
I freeze it in small batches just to use in recipes like this.
Store bought pesto would work just as well.
How to Make Salmon with Pesto and Feta
This is 2 pounds of salmon that I cut into 4 pieces.
Just sprinkle with kosher salt and pepper.
Then spread some pesto on top and place on a lined baking sheet.
This goes into the oven at 425 degrees for 10 minutes.
Put some crumbled feta on top and place back into the oven for 2 more minutes.
Plus 2 more minutes under the broiler.
I wish I could tell you Salmon with Pesto and Feta was more complicated than that, but seriously that’s it!

When I make salmon with pesto and feta, I like to get extra salmon and meal prep a few salads.
I baked an extra half pound of salmon with olive oil, kosher salt, pepper, and Old Bay seasoning (12 minutes at 425 degrees).
Then I just put it top of one of those salad kits that they sell at the store.
Easy peasy lunch for the next two days for me 🙂

Salmon with Pesto and Feta
A simple and elegant salmon dish full of flavor
Ingredients
- 4 salmon fillets (approx 4 oz. each)
- kosher salt, pepper
- 1 cup pesto
- 4 oz crumbled feta
Instructions

Place the salmon fillets, skin side down on a lined baking sheet. Sprinkle with kosher salt and pepper.

Top each with 1/4 cup pesto. Place in a 425 degree oven for 10 minutes.

Top each with 1 oz crumbled feta and place back in the oven for 2 more minutes, plus 2 more minutes with the broiler set to high.
