
Air Fryer Loaded Potato Rounds
These Air Fryer Loaded Potato Rounds could be an appetizer recipe, or they could be an easy side dish.
We had them along side of Sriracha Honey Mustard Chicken and they were fabulous.
The inspiration for these is from my husband who orders something very similar at one of our favorite restaurants.
They deep fry the potatoes, but by using the air fryer it cuts just enough calories for me to justify the bacon and cheesy goodness.
How to make Air Fryer Loaded Potato Rounds
Start by slicing two russet potatoes into 1/4 inch slices.
And if you’re not feeding lots of hungry kids like me, you could cut this recipe in half and only use one potato.

Then brush both sides of the potato rounds lightly with olive oil.
I found this was a pretty easy job to do on a baking sheet.

Next, season both sides with a little kosher salt and pepper.

And into the air fryer basket. These will cook in the air fryer for 10 to 12 minutes at 400 degrees.
No need to flip.

I mean, these could be a side just like this.
Gorgeous, golden brown potato rounds!

But, since these are “loaded”, sprinkle the cheese and bacon bits over top.

And back into the air fryer for a minute for the cheese to melt completely.

We had our Air Fryer Loaded Potato Rounds with sour cream and green onions!

These didn’t last long at dinner, and I got quite a few compliments from my family.

It’s always a good feeling knowing you’ve made everyone happy at dinner 🙂

Air Fryer Loaded Potato Rounds
Air Fryer Loaded Potato Rounds are sliced potatoes cooked until slightly crisp on the outside and then topped with cheese, bacon, sour cream, and chives
Ingredients
- 2 russet potatoes
- 1 Tbsp olive oil
- kosher salt, pepper
- 1 1/2 cups shredded cheese of choice (I used Mexican blend)
- 4 strips cooked and crumbled bacon
- Optional: top with sour cream and chives
Instructions

Slice the potatoes into 1/4 inch round pieces. Brush each potato round with olive oil and season with kosher salt and pepper on both sides.

Place the potato rounds into the air fryer basket for 10 to 12 minutes. Top each with some shredded cheese and crumbled bacon. Turn the air fryer back on for 1 more minute at 400 degrees.
Note: Depending on the size of your air fryer, these may need to be done in two batches.

Top with sour cream and chives if desired.
