Sweet Chili Salmon and Green Beans

I feel like some healthy dinners can leave you feeling jipped and like, well, you just ate a boring healthy meal.
Not this one…this one leaves you feeling like you just treated yourself at a five star restaurant 🙂
How to make Sweet Chili Salmon and Green Beans
The sauce is sweet Thai chili sauce, soy sauce, garlic, and ginger.
I always use garlic and ginger paste that comes in a tube.
Super easy and in my opinion, very flavorful.
One pound of trimmed, fresh green beans go onto a lined baking sheet.
You’ll see at the end why I lined the baking sheet, this one gets sticky and messy.
Lining it saves a bunch of clean up.
Toss the green beans with three tablespoons of the sweet chili sauce and bake for six minutes in a 400 degree oven.
After six minutes add the salmon to the baking sheet, skin side down.
Just move the green beans to the side to make room for the salmon.
Brush the salmon with more of the sweet chili sauce.
Be careful not to dip the brush into the sauce after it’s touched the raw salmon.
I like to remove what I’m brushing with from the original bowl.
Back into the oven for 12 more minutes.
Turn the broiler on high during the last minute or two to caramelize the top.

Serve with the extra sweet chili sauce on the side and enjoy!
The flavor of the sweet chili salmon is over the top delicious and the green beans have an amazing crispiness to them!

Sweet Chili Salmon and Green Beans
An easy and delicious one pan salmon dinner
Ingredients
- 1/2 cup sweet Thai chili sauce
- 3 Tbsps soy sauce
- 1/2 Tbsp ginger paste or fresh minced ginger
- 1/2 Tbsp garlic paste or fresh minced garlic
- 1 pound fresh green beans trimmed
- 4 salmon fillets (approx. 5 oz per piece)
Instructions

In a small bowl whisk together the sweet Thai chili sauce, soy sauce, ginger, and garlic until evenly mixed.

Place the trimmed green beans in a single layer on a lined baking sheet. Add three tablespoons of the sweet chili sauce to the green beans and toss until evenly coated.

Bake the green beans in a 400 degree oven for 6 minutes.

Add the salmon fillets, skin side down, to the baking sheet, arranging green beans around the salmon. Brush the salmon fillets with 3 to 4 tablespoons of the sweet chili sauce.

Bake the salmon and green beans in a 400 degree oven for 12 minutes, set the broiler on high for 2 additional minutes.

Serve with the extra sweet chili sauce.
