Roasted Turkey Sausage and Veggies

Easy dinner recipes, like Roasted Turkey Sausage and Veggies, that only require one pan can be your best friend, especially on busy nights.

This one has the added bonus of also being light and healthy.

Smoked turkey sausage combined with a few roasted veggies, all goes on to one pan, a half hour in the oven, and dinner is done.

How to Make Roasted Turkey Sausage and Veggies

I used a red pepper, yellow pepper, red onion, potatoes, grape tomatoes, and mushrooms, but you could use any mix of veggies that you prefer.

I lined my baking sheet with parchment paper to make for easy clean up, but I would recommend foil instead because the juices did get under the parchment paper.

Smoked turkey sausage is already cooked, so simply slice the link into pieces and set aside.

You could use regular smoked sausage, but I was looking to cut a few calories.

I cut the mushrooms in half and chopped of all the vegetables into pieces that are similar in size.

Place everything (except the tomatoes and sausage) onto the baking sheet.

Then drizzle with olive oil and sprinkle with kosher salt, pepper, and creole seasoning (or your favorite seasoning blend).

I let this roast in a 425 degree oven for 10 minutes.

After 10 minutes, add the whole grape tomatoes and smoked turkey sausage slices. Toss it all around and roast for an additional 20 minutes.

So this baking sheet filled with deliciousness has been roasting for 30 minutes total, and it’s perfectly cooked.

However, I LOVE charred veggies so I turn the broiler on high for 5 minutes (baking sheet on middle rack.

If you broil on the top rack you won’t have perfectly charred…you’ll have burnt).

The kids eat this over buttered pasta noodles, and I let them pick which veggies they want.

My son likes raw peppers so I saved him a few slices because I know he won’t eat them cooked.

My husband and I enjoy it just like this…the flavors are out of this world!

Ingredients

  • 1 pound smoked turkey sausage already cooked
  • 8 oz whole mushrooms
  • 1 red pepper
  • 1 yellow pepper
  • 5 red potatoes
  • 1 pint grape or cherry tomatoes
  • 1 red onion
  • olive oil, kosher salt, pepper, creole seasoning

Instructions

  1. Cut the smoked sausage link into slices. Cut each mushroom in half. Cut the peppers, potatoes, and onions into large pieces similar in size (about the size of the turkey slices is what I aimed for).

  2. Set the tomatoes and sausage aside. Place all the other veggies onto a sheet pan lined with foil. Drizzle with olive oil and sprinkle with kosher salt, pepper, and creole seasoning. Toss to coat evenly.

  3. Place in a 425 degree oven for 10 minutes on the middle rack. Add the tomatoes and sausage, carefully toss to mix them in. Roast for an additional 20 minutes.

  4. If you want the top charred, turn the broiler on high for an additional 5 minutes while the baking sheet is on the middle rack (not top rack).

  5. Serve as is or over buttered pasta noodles or rice.
