Smoked Turkey Sausage Corn Dog Muffins

My husband, who doesn’t even like corn dogs, absolutely LOVED this sausage corn dog muffins recipe.

If your kids like corn dogs as much as mine do, this quick and easy dinner will be your new best friend.

It’s a fun spin on corn dogs that’s at least a little healthier than the traditional deep fried hot dog coated with cornmeal batter.

How to Make Turkey Sausage Corn Dog Muffins

Only two ingredients, plus whatever you need for the cornbread mix makes this an awesome weeknight meal.

I used a honey cornbread box mix.

Prepare it according to the package directions which called for an egg, milk, and vegetable oil.

The mix said it makes 12 muffins, but with including the smoked turkey sausage, I knew it would make more.

I ended up with 18 corn dog muffins.

Spray the muffin pans with non stick spray and put a spoonful of batter into each one.

I used 2 muffin tins, 12 muffins in one tin and only 6 in the second tin.

I cut the already cooked smoked turkey sausage into 18 pieces, each one being like an inch long.

Place them right into the center of each cornbread muffin.

You could even have the kids help you with this part!

Whenever I involve my kids in preparing the meal or cooking, they are always more likely to eat it or try new things.

Time to Bake Sausage Corn Dog Muffins!

Bake according to the package directions of the cornbread mix.

Mine said bake in a 400 degree oven for 14-16 minutes.

Turkey Sausage Corn Dog Muffins

I served these with some fresh fruit and a simple salad on the side and called it dinner.

You can serve them with mustard, ketchup, or just plain.

My husband used some spicy Sriracha mustard that I found at a local specialty store, I think it made him feel more manly about eating corn dog muffins for dinner đŸ™‚

You could for sure substitute regular hot dogs for the turkey sausage, but I wanted to make them more grown up-ish and plus my kids loved smoked turkey sausage.

Hot metts would be so good too!

Bringing these to a party as an appetizer would surely be a hit as well, they are great at room temperature so no need to even warm them up.

Ingredients

  • 1 box honey cornbread mix or regular cornbread mix
  • any additional ingredients listed on the cornbread mix box
  • 1 pound already cooked smoked turkey sausage
  • non stick cooking spray

Instructions

  1. Prepare the cornbread mix according to the package directions. 

  2. Spray muffin tins with nonstick spray. Fill each muffin with a spoonful of the cornbread batter. (I used 2 muffin tins, 12 muffins in one tin, and only 6 in the second tin)

  3. Cut the already cooked sausage into 18 pieces, place each piece in the center of the cornbread muffins.

  4. Bake according to package directions on the cornbread box.
