My daughter looked at me like I had five heads when I told her I was making Honey Cinnamon Sweet Potatoes and Apples.
Sweet potatoes and apples go perfectly together, and I pair them together quite often.
Apparently though I’ve never made them for my 21 year old daughter.
Her response was “You mean you’re making them together?
Like in the same pan?”
Yes I said…trust me!
I got the side eye as if to say she doubted me.
But at dinner she absolutely LOVED them and she even had seconds and thirds.
Here is how to make Honey Cinnamon Sweet Potatoes and Apples
To make them, dice two sweet potatoes and two apples into half inch cubes.
I leave the skin on both the sweet potatoes and the apples.
Then set a large skillet over medium heat and add olive oil, the diced sweet potatoes, kosher salt, and pepper.
They will cook for about 4 to 5 minutes just by themselves, stirring them a few times.
Next add the diced apples and 1/4 cup water.
And ground cinnamon, ground cumin, and crushed red pepper flakes.
Sounds crazy adding crushed red pepper flakes to apples, but it gives a great sweet and spicy combo.
Cook the apples and sweet potatoes together for another 4 to 5 minutes.
Then add some honey and cook a few more minutes.
Taste for seasoning, and add more kosher salt and pepper if needed.
Mine needed just a touch to make it perfect.
Honey Cinnamon Sweet Potatoes and Apples is a great side dish to serve with chicken or pork.
We served it with some grilled chicken sausage and it went very well together.
