This recipe for Red Pepper Shrimp Linguine Alfredo turns regular pasta night into something extraordinary!

An easy to make red pepper cream sauce is the secret weapon to this flavorful dinner.

And it starts with only a few ingredients…

How to make Red Pepper Shrimp Linguine Alfredo

First put a jar of roasted red peppers (drained of extra liquid) into a blender or food processor.

Then add some garlic, Italian seasoning, kosher salt, pepper, crushed red pepper flakes, and a cup of heavy cream.

And blend until smooth.

You can even make the sauce a few days ahead and store it, covered, in the fridge.

That way when you make this fabulous dinner it comes together very quickly.

Boil a half pound of linguine, or any pasta you like, in salted water according to the package directions.

Then set a skillet over medium heat while the pasta is cooking away.

Add some butter, a pound of shrimp, and season with kosher salt, pepper, crushed red pepper flakes, and Italian seasoning.

Shrimp cook fast, just about 2 minutes per side.

Remove the shrimp and set them aside, but leave the same skillet over medium heat.

A little more butter and the cream sauce go into the skillet next.

Once the sauce starts to bubble let it cook for 2 to 3 minutes.

Then stir in shredded parmesan cheese.

Finally, the cooked pasta and shrimp join the party, and also a half cup of the starchy pasta water that I saved before draining the pasta.

Mix it all together and taste for seasoning, adjust seasoning with more kosher salt, pepper, crushed red pepper flakes, and Italian seasoning as needed.

Red Pepper Shrimp Linguine Alfredo has an easy to make creamy sauce tossed with pasta for a simple yet elegant dinner recipe!

Ingredients

  • 1 12 ounce jar roasted red peppers drained of liquid
  • 1 cup heavy cream
  • 4 to 6 cloves garlic
  • 1 tablespoon Italian seasoning (plus a little more for the shrimp)
  • kosher salt, pepper, crushed red pepper flakes
  • 8 ounces linguine (or any pasta of choice)
  • 3 tablespoons butter
  • 1 pound jumbo shrimp peeled and deveined
  • 3/4 cup shredded parmesan cheese
  • 1/2 cup water (remove from the pasta before draining)
  • Optional: basil for garnish

Instructions

  1. Put the red peppers, heavy cream, garlic, Italian seasoning, kosher salt, pepper, and crushed red pepper flakes in a food processor or blender. Blend until smooth.

  2. Boil the pasta in salted water according to package directions, drain and set aside (rinse with cold water if the pasta will be sitting for awhile to prevent it from overcooking).

    Note: Remember to save 1/2 cup of the pasta water before draining.

  3. Set a large skillet over medium heat and add half of the butter and the shrimp, season with Italian seasoning, kosher salt, pepper, and crushed red pepper flakes. Cook the shrimp about 2 minutes per side and remove from the skillet.

  4. Leave the same skillet over medium heat, add the other half of the butter and pour in the red pepper cream sauce. Once the sauce starts bubbling cook about 2 to 3 minutes, then mix in the parmesan cheese.

  5. Stir in the cooked pasta, water that was set aside, and the shrimp. Taste for seasoning and add more kosher salt, pepper, crushed red pepper flakes, and/or Italian seasoning if needed. Serve with basil if desired.
