I am a lover of all shrimp and grits recipes.

Totally brings me back to my childhood vacations… beach + shrimp and grits = happiness for me đŸ™‚

I created this dish as the perfect combo of mine and my husband’s favorite foods.

Buffalo chicken wings for him and traditional shrimp and grits for me.

Because if I love you, I show you in food and creating a dish just for you.

How to make Buffalo Shrimp and Grits

First we will make the grits… extra rich and cheesy grits, that is đŸ˜‰

Start with boiling 3 cups chicken broth and add in 3/4 cup of corn grits or polenta.

Also a cup of heavy cream, butter, and lots of kosher salt and pepper.

This dish is for sure NOT diet food… but we all deserve a splurge meal once in awhile, right?!

Let the grits simmer over medium low heat for 30 minutes, stirring several times.

While the grits do their thing on the stove, let’s make the shrimp and sauce!

Set a skillet over medium heat and once hot add some olive oil.

And a pound of jumbo shrimp that have been peeled and deveined.

Then season with Old Bay seasoning.

Cook the shrimp 1 to 2 minutes per side, flipping halfway through.

Then remove them and set aside.

To the same skillet, still over medium heat, add a diced onion and more Old Bay.

You may need a little more olive oil as well.

Cook for 3 to 4 minutes and add some fresh minced garlic.

And cook another minute.

Next add a cup of heavy cream and 1/2 to 3/4 cup buffalo wing sauce.

The heat level will depend on how much buffalo sauce you add, and also how spicy your buffalo sauce is.

Let this simmer and bubble away for about 5 minutes, stirring a few times.

The sauce will thicken slightly as it cooks.

Taste for seasoning and add more Old Bay if needed.

If it’s too spicy, add more heavy cream.

By the time your shrimp and sauce are ready, it should be just about time to add cheesy goodness to the already decadent grits.

I went with just a few tablespoons of blue cheese, and a cup of cheddar.

The blue cheese can quickly overwhelm the flavor, so I recommend just adding a little.

And top the dish with more blue cheese if you’d like.

Stir in the cheese and cook another minute or two.

Taste for seasoning and add more kosher salt and pepper if needed.

Buffalo Shrimp and Grits has a stunning presentation!

Lay a bed of grits down first, then some of the buffalo cream sauce, and the gorgeous shrimp.

Garnish with parsley or green onions and blue cheese crumbles.

Also, HIGHLY recommended, a lemon wedge to squeeze over top before digging in.

The lemon gives a much needed brightness to this very rich dish.

Buffalo Shrimp and Grits puts a spicy spin on traditional shrimp and grits, blue cheese and cheddar grits, shrimp, and a buffalo cream sauce!

Ingredients

Cheddar and Blue Cheese Grits

  • 3 cups chicken broth
  • 3/4 cup corn grits or polenta (I used Bob's Red Mill)
  • 1 cup heavy cream
  • 2 tablespoons butter
  • kosher salt, pepper
  • 1 cup shredded cheddar cheese
  • 2 to 3 tablespoons blue cheese crumbles (plus more to sprinkle over top)

Shrimp and Buffalo Cream Sauce

  • 1 to 2 tablespoons olive oil
  • 1 pound jumbo shrimp peeled and deveined
  • Old Bay seasoning
  • 1 onion diced
  • 4 to 5 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 to 3/4 cup buffalo wing sauce
  • lemon wedges, parsley or chives

Instructions

Cheddar and Blue Cheese Grits

  1. Put the chicken broth in a large saucepan or pot. Bring to a boil and add the grits, heavy cream, butter, kosher salt, and pepper.

  2. Reduce the heat to medium low and cook 30 minutes, stirring several times.

  3. Stir in the cheddar and blue cheese and remove from heat. If not creamy enough, stir in more heavy cream or broth. Taste for seasoning and add more kosher salt and pepper if needed.

Shrimp and Buffalo Cream Sauce

  1. Set a skillet over medium heat, once hot add the olive oil and shrimp. Season the shrimp with Old Bay and cook 1 to 2 minutes per side. Remove from the skillet and set aside.

  2. Add the onion and more Old Bay to the same skillet over medium heat, add more olive oil if needed. Cook 3 to 4 minutes, add the garlic and cook another minute.

  3. Add the heavy cream and buffalo sauce to the skillet. Once simmering/ bubbling, reduce heat to medium low and simmer 5 to 6 minutes, stirring a few times. Taste for seasoning and add more Old Bay if needed.

    Note: Depending on the heat level of your wing sauce and your spice preference, if the sauce is too spicy just add a little more heavy cream. If not spicy enough add more wing sauce.

  4. Serve the shrimp on a bed of cheddar and blue cheese grits, then top with the buffalo cream sauce, blue cheese crumbles, a lemon wedge to squeeze over top, and parsley or chives for garnish.
