Smoked Trout Eggs Benedict

Smoked Trout Eggs Benedict is just one of the yummy recipes I made with my Traeger Smoked Trout!

Smoked trout is very similar to smoked salmon, so if you have smoked salmon just use that instead.

I also used a great home cook hack and “poached” the eggs in the air fryer (stay tuned for that fun trick).

I supposed you could also use a store bought hollandaise sauce if you really wanted to make this extra easy.

How to make Smoked Trout Eggs Benedict

First make the hollandaise sauce, which is actually pretty simple (or use store bought… I won’t judge 😉 ).

Put 4 egg yolks in a food processor.

Then add in 2 tablespoons lemon juice and some Old Bay seasoning.

It pairs so well with seafood, so I thought why not add it?!

Turn the food processor on for about a minute, then slowly drizzle in a stick of hot melted butter.

The hot butter will cook the eggs enough and create a thick and rich sauce 🙂

And now for the air fryer hack for cooking the eggs… start with some small bowls or ramekins.

First, spray each with cooking spray and add a tablespoon of water to each.

Then crack an egg into each one and put them in the air fryer basket.

Set the air fryer to 370 degrees for 5 to 8 minutes, or until the eggs are cooked how you like.

Of course, feel free to actually poach your eggs for a more traditional eggs benedict.

To assemble the eggs benedict, start with a toasted English muffin half with some of the flaked Traeger Smoked Trout (or store bought smoked trout or salmon).

Then add a few spears of cooked asparagus.

I actually air fried my asparagus for about 6 minutes.

But grilled asparagus would be amazing!

Finally, top the Smoked Trout Eggs Benedict with the poached egg and Old Bay hollandaise!

Oh, and some fresh dill and more Old Bay to make it even prettier 🙂

You’ll feel like you are brunching at a fancy restaurant with this dish!

Smoked Trout Eggs Benedict is a great recipe for smoked trout for breakfast or brunch, even has air fryer eggs benedict directions!

Ingredients

Old Bay Hollandaise Sauce

  • 4 egg yolks at room temperature
  • 2 tablespoons lemon juice
  • 1/2 tablespoon Old Bay seasoning
  • 1 stick hot melted butter

Smoked Trout Eggs Benedict

  • nonstick cooking spray
  • 8 tablespoons water
  • 8 eggs
  • 4 toasted English muffins cut in half (8 total halves)
  • 1 pound smoked trout (store bought or link to recipe in post above)) flaked into smaller pieces
  • 1 pound cooked asparagus (I air fried mine for 6 to 7 minutes)
  • Optional: fresh dill, Old Bay seasoning

Instructions

Old Bay Hollandaise

  1. Put the egg yolks, lemon juice, and Old Bay in a food processor. Blend for just under a minute.

  2. Very slowly drizzle in the hot melted butter as the food processor is on, about a minute total or until it has a slightly thick, sauce like consistency.

  3. Taste for seasoning and add more Old Bay if needed. Set the sauce aside while you make the eggs benedict.

Smoked Trout Eggs Benedict

  1. Spray non stick cooking spray and put a tablespoon of water into small glass bowls or ramekins (make sure dish is air fryer safe) and crack an egg into each dish. This may take two batches.

    Note: Or you can poach your eggs instead of the air fryer method.

  2. Place the bowls with eggs in the air fryer, set the air fryer to 370 degrees for 5 to 8 minutes depending how you like the egg yolks cooked. Carefully remove the dishes with the eggs, they will be hot.

  3. Assemble each with a toasted English muffin (cut side up), some flaky pieces of smoked trout on the English muffin, then add a few cooked asparagus spears, a cooked/ poached egg, and some of the Old Bay hollandaise over top. Garnish with fresh dill and Old Bay if desired.
