Why are they so “easy” you may be wondering…
Well, my friends, we are using FROZEN popcorn shrimp instead of frying our own!
See, told ya… EASY PEASY 😉
And, because you know I don’t do anything normal or traditional, I am putting a buffalo wing twist to my po boys.
How to make Easy Buffalo Shrimp Po Boys
First cook a 12 ounce package of frozen popcorn shrimp according to package directions.
I am using my air fryer for both convenience and to get them extra crisp-ity crunch-ity.
Don’t get me wrong, I know how to fry up a darn good breaded shrimp for a more homemade version.
But… for the busy home cook who worked all day and just wants a quick dinner, this recipe hack is extraordinary.
After the shrimp are golden brown and crisp, toss them in your favorite buffalo wing sauce.
Then assemble the sandwiches starting with a heaping pile of the spicy shrimp.
And set out toppings of choice such as lettuce, blue cheese, pickles, ranch dressing, etc.
I let everyone in my family assemble their own.
Less work on me, yes, but more importantly they all get what they want (aka no complaining 😉 ).
A stunning dinner with very little effort… gotta love Easy Buffalo Shrimp Po Boys!
I kind of felt like the star of my own kitchen with how much my family raved about this dinner.
And they didn’t even know it took almost no effort from me…. shhhh, our little secret, deal?!

Easy Buffalo Shrimp Po Boys
Easy Buffalo Shrimp Po Boys, so simple to make po boy sandwiches at home in the air fryer and with a spicy buffalo ranch spin on a classic!
Ingredients
- 1 12 ounce package frozen popcorn shrimp
- 1/2 to 3/4 cup buffalo sauce
- 4 sub rolls (I used King's Hawaiian Mini Sub Rolls)
- 1 1/2 cups thinly shredded lettuce
- 1/2 cup ranch dressing
- Optional toppings: tomatoes, pickles, blue cheese crumbles
Instructions

Cook the shrimp in the oven or air fryer according to the package directions. I cooked mine in the air fryer at 400 degrees for about 12 to 15 minutes.

When the shrimp are done, toss them in a bowl with buffalo sauce until evenly coated.

Toast your sub rolls if desired and build each po boy with a bottom layer of the buffalo popcorn shrimp, thinly shredded lettuce, ranch dressing, and toppings of choice like tomatoes, pickles, and/or blue cheese crumbles if desired.
