Cajun Shrimp Boil Soup
I show my love in food (weird, right?!)… so this Cajun Shrimp Boil Soup combined my daughter’s two favorites into one amazing recipe!
My oldest daughter absolutely LOVES her Cajun shrimp boils.
But she is also a soup fanatic (kind of like her ole’ mom).
I mean, soup making day in my house is the happiest of days… there’s even some dancing in the kitchen.
Lucky for me my family loves me and accepts my strange ways 😉
Not only did I make this dish just for her, I also delivered it to her with my mom for a fun girl’s visit.
How to make Cajun Shrimp Boil Soup
All the yumminess in a Cajun shrimp boil with the potatoes, corn, sausage, and shrimp.
And some soup ingredients is all you need to get started.
First set a large soup pot over medium heat and add a diced onion.
And season with kosher salt, pepper, Old Bay, and crushed red pepper flakes.
Cook the onions for about 5 minutes.
Then add a pound of diced smoked sausage and fresh minced garlic.
And cook another 5 minutes or so.
Next in goes 1 1/2 pounds of diced redskin potatoes.
And the kernels from 5 to 6 ears corn on the cob.
Plus more kosher salt, pepper, Old Bay, and crushed red pepper flakes.
Cook everything for another 5 minutes, stirring several times.
Add some chicken base, such as this Better than Bouillon.
Plus 6 cups of chicken broth and fresh thyme.
Bring to a boil and then reduce the heat to medium low and simmer for 20 minutes.
This is an optional step if you like a thicker, creamier soup.
Just use your immersion blender and pulse a few times.
Finally add 1 1/2 pounds of shrimp, I used medium size so they were the perfect bite.
Also some fresh lemon juice.
Let this bubble away for another few minutes and taste for seasoning.
Add more Old Bay or kosher salt if needed.
My daughter loves this Cajun Shrimp Boil Soup that I created just for her 🙂

Cajun Shrimp Boil Soup
Cajun Shrimp Boil Soup is a recipe with all the ingredients from a Cajun shrimp boil but made as a soup, so flavorful and easy to make!
Ingredients
- 2 tablespoons olive oil
- 1 onion diced
- kosher salt, pepper, Old Bay seasoning, crushed red pepper flakes
- 1 pound smoked sausage or andouille sausage diced
- 6 to 7 cloves garlic
- 5 to 6 ears corn on the cob kernels cut from the cob
- 1 1/2 pounds redskin potatoes diced
- 6 cups chicken broth
- 1 tablespoon chicken base (I used Better than Bouillon)
- 1 tablespoon fresh thyme
- a few dashes cayenne pepper hot sauce or hot sauce of choice
- 1 1/2 pounds medium size shrimp peeled and deveined
- 3 tablespoons lemon juice
Instructions

Set a large soup pot over medium heat and add the olive oil, diced onion, kosher salt, pepper, Old Bay, and crushed red pepper flakes. Cook 5 to 6 minutes, stirring a few times.

Add the diced sausage and garlic. Cook 5 to 6 minutes, stirring a few times.

Add the corn kernels, diced potatoes, more kosher salt, pepper, Old Bay, and crushed red pepper flakes. Cook 5 to 6 minutes, stirring several times.

Pour in the chicken broth and add the chicken base, fresh thyme, and hot sauce. Bring this to a boil and reduce the heat the medium low. Simmer for 20 minutes. For a thicker soup use an immersion blender to pulse the soup a few times.

Add the shrimp and lemon juice. Cook 5 to 6 more minutes. Taste for seasoning and add more kosher salt, pepper, Old Bay, and/or crushed red pepper flakes as needed.
