Air Fryer Herb Salmon and Potatoes
I have yet another complete air fryer dinner recipe today, friends… Air Fryer Herb Salmon and Potatoes!
This one is also on the healthier side, so bonus points for that đŸ™‚
Lots of bright, fresh flavor in this recipe, so at least it doesn’t feel too healthy.
How to make Air Fryer Herb Salmon and Potatoes
You’ll need a pound of redskin potatoes and two salmon fillets to start.
Also some olive oil, garlic, lemon, and fresh herbs of choice.
I went with thyme and rosemary, but dill and chives would be amazing too!
First mix together 1/4 cup olive oil, 2 tablespoon of lemon juice and chopped herbs, and plenty of minced garlic.
Then dice the pound of potatoes.
Spoon some of the garlic herb oil over the salmon.
Then add the rest to the bowl with the potatoes.
Toss until evenly coated.
Then season both the salmon and the taters with kosher salt and pepper.
The potatoes will take longer to cook, so we will add those to the air fryer first.
Set the air fryer to 400 degrees for 8 to 9 minutes.
Then place the gorgeous salmon fillets right over the potatoes.
And set the air fryer to 400 degrees for 10 to 12 more minutes.
Cook time will depend on your air fryer and the size of the salmon fillets.
Serve Air Fryer Herb Salmon and Potatoes with lemon wedges on the side đŸ™‚
Usually I’m a saucy girl, but this meal did not even need a sauce!
You could certainly add a sauce if you like, heck… it’s your dinner đŸ˜‰

Air Fryer Herb Salmon and Potatoes
Air Fryer Herb Salmon and Potatoes is a complete dinner recipe for the air fryer with a lemon garlic herb oil, so flavorful and healthy!
Ingredients
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 tablespoons fresh chopped herbs of choice (I used thyme and rosemary)
- 5 to 6 cloves garlic minced
- 2 salmon fillets
- 1 pound redskin potatoes diced
- kosher salt, pepper
- 2 to 3 lemon wedges
Instructions

Put the olive oil, lemon juice, fresh chopped herbs, and garlic in a small bowl. Mix together. Spoon some of this mixture over the salmon fillets.

Put the diced potatoes in a bowl and add the rest of the garlic herb oil. Toss until evenly mixed. Season both the potatoes and the salmon with kosher salt and pepper.

Put the potatoes in the air fryer at 400 degrees for 8 to 9 minutes.

Place the salmon fillets over the potatoes and set the air fryer to 400 degrees for 10 to 12 more minutes. Serve with lemon wedges on the side to squeeze over top.
