Ingredients
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh chopped herbs of choice (I used thyme and rosemary)
  • 5 to 6 cloves garlic minced
  • 2 salmon fillets
  • 1 pound redskin potatoes diced
  • kosher salt, pepper
  • 2 to 3 lemon wedges
Instructions
  1. Put the olive oil, lemon juice, fresh chopped herbs, and garlic in a small bowl. Mix together. Spoon some of this mixture over the salmon fillets.

  2. Put the diced potatoes in a bowl and add the rest of the garlic herb oil. Toss until evenly mixed. Season both the potatoes and the salmon with kosher salt and pepper.

  3. Put the potatoes in the air fryer at 400 degrees for 8 to 9 minutes.

  4. Place the salmon fillets over the potatoes and set the air fryer to 400 degrees for 10 to 12 more minutes. Serve with lemon wedges on the side to squeeze over top.
