One Pan Cajun Chicken and Peppers
Extra busy days require extra easy dinner recipes… that was the inspiration behind One Pan Cajun Chicken and Peppers.
A few minutes of chopping and then the oven does the rest of the work.
And only one pan to wash gives this recipe some extra bonus points in my opinion.
You have a few serving options as well… serve as it is, as tacos, or as lettuce wraps with some toppings like cheese and sour cream.
Depending on how you serve this, it can be keto friendly and low carb.
How to make One Pan Cajun Chicken and Peppers
I am starting with 1 1/2 pounds of chicken breasts.
And a red bell pepper, orange bell pepper, jalapeno peppers, an onion, lime, garlic, and cayenne pepper sauce.
Of course some Cajun seasoning too!
First slice up the chicken and place on a baking sheet.
Then slice the peppers and onions and mince the garlic.
Add those to the baking sheet with some olive oil, plenty of Cajun seasoning, lime juice, cayenne pepper sauce, kosher salt, and pepper.
If you remove the seeds from the jalapenos they won’t be spicy, but if you like spice feel free to leave some in.
I didn’t include exact seasoning measurements… just season according to your taste preference.
Place this in a 425 degree oven for 25 to 30 minutes, tossing halfway through.
And while it cooks in the oven, set up a taco bar if you are serving as tacos (or lettuce wraps).
Hey, it would also be amazing on top of fettuccini alfredo (why oh why am I just now thinking of this?!).
One Pan Cajun Chicken and Peppers smells insanely delicious!
Taste for seasoning and add more kosher salt, pepper, and Cajun seasoning if needed.
