Ingredients
  • 1 1/2 pounds boneless skinless chicken breasts
  • 1 onion
  • 1 red pepper
  • 1 orange pepper
  • 2 jalapeno peppers
  • 4 to 5 cloves garlic minced
  • 2 tablespoons lime juice
  • a few dashes Tabasco sauce or cayenne pepper sauce
  • olive oil, kosher salt, pepper, Cajun seasoning blend
  • Optional: flour tortillas, Boston lettuce (for lettuce wraps), sour cream, cheese
Instructions
  1. Cut the chicken into slices and put on a sheet pan. Slice the onion and peppers (remove seeds from the peppers) and place them on the sheet pan with the chicken.

  2. Add the minced garlic, lime juice, Tabasco or cayenne sauce, olive oil, kosher salt, pepper, and Cajun seasoning (season according to your taste preference). Toss until evenly mixed.

  3. Place the sheet pan into a 425 degree oven for 25 to 30 minutes, tossing halfway through.

  4. Taste for seasoning and add more kosher salt, pepper, and/or Cajun seasoning if needed. Serve as is or serve as tacos or lettuce wraps with sour cream and cheese as toppings.
