I’ve got quite the healthy dish for you today. ‘Tis the season for healthy eating I suppose, but One Pan Shrimp Zucchini and Peppers doesn’t really have that healthy feel.
It’s extra tasty and not your normal, boring healthy dinner.
I sold this to the kids by serving it over fettuccini alfredo (literally boiled the pasta and tossed with jarred alfredo sauce).
They are suckers for anything with pasta.
But I stayed strong and enjoyed just like this, without the pasta 🙂
How to Make One Pan Shrimp Zucchini and Peppers
Start by slicing a zucchini (or two depending on size), a yellow pepper, and a red pepper.
Also peel and devein a pound of jumbo shrimp.

Place all the veggies and shrimp on a baking sheet.

Then get yourself an adorable helper to season the dish.
Really, you could do it by yourself but this is my grandson who LOVES to help me cook.
He even has his own bowls and pretend food and “cooks” by himself quite often 🙂

Olive oil, kosher salt, pepper, crushed red pepper flakes, garlic, Italian seasoning, and grated parmesan cheese goes on the shrimp and veggies for maximum flavor.

Toss until evenly mixed and then it will go in the oven.
I also added a little more Italian seasoning and cheese over top.

It only takes 16 to 18 minutes in a 400 degree oven.
No need to toss or mess with it at all.

One Pan Shrimp Zucchini and Peppers is a gorgeous meal with all those colors!
For me, this was a perfect complete meal.
I even had some leftover and was super good the next day for lunch.

One Pan Shrimp Zucchini and Peppers
One Pan Shrimp Zucchini and Peppers is a healthy dinner made on one sheet pan for easy clean up, very yummy and big on flavor
Ingredients
- 1 pound jumbo shrimp peeled and deveined
- 1 to 2 zucchini (depending on size)
- 1 red bell pepper
- 1 orange bell pepper
- 1 Tbsp olive oil
- 1 Tbsp garlic paste or minced garlic
- 1 Tbsp Italian seasoning
- 1/4 cup grated parmesan cheese
- kosher salt, pepper, crushed red pepper flakes
Instructions

Pat the shrimp dry with paper towels and place on a baking sheet.

Slice the zucchini into 1/4 inch rounds and cut the peppers into 1/4 inch slices. Place them on the sheet with the shrimp.

Add the olive oil, garlic, Italian seasoning, grated parmesan, kosher salt, pepper, and crushed red pepper flakes. Toss until evenly mixed, add more Italian seasoning and parmesan over top if desired.

Bake in a 400 degree oven for 16 to 18 minutes.

Serve over buttered noodles, fettuccini alfredo, or as is.
