Pimento Cheese Chicken and Biscuits
Pimento Cheese Chicken and Biscuits is a recipe combo of flavors that you’ll fall in love with.
Pimento Cheese is a southern favorite, traditionally served on plain white bread as a sandwich or with crackers.
I stepped it up a notch and added a twist that was absolutely amazingly delicious.
There are about a thousand different variations of this cheese, this one is pretty simple.
How to Make Pimento Cheese Chicken and Biscuits
I combined shredded cheddar cheese, mayo, pimentos, kosher salt, garlic powder, and some ground red pepper and hot sauce for a little heat.
If you’re not a fan of spice, just leave out the ground red pepper and hot sauce.
I plan ahead when cooking on busy weeknights, so I had some cooked and shredded chicken already waiting for me in the fridge.
I make Simple Shredded Chicken on the weekends and use it throughout the week to simplify the craziness that is known as Monday through Thursday.
So after I made the Pimento Cheese, just stir in the chicken.
Another way to simplify this dish is by using a roll of jumbo biscuits from the store.
I chose honey biscuits because I love the spicy flavor of the Pimento Cheese with the sweetness from the honey.
Once the biscuits are cooked and cooled slightly, assemble your the Pimento Cheese Chicken and Biscuits and enjoy.
If you do have some of the cheese mixture left, it’s SO good just on crackers.

Pimento Cheese Chicken and Biscuits
A fun twist on traditional pimento cheese spread!
Ingredients
- 1 roll jumbo honey biscuits (8 come in a roll)
- 2 cups shredded cheddar cheese
- 3/4 cup mayo
- 4 oz chopped pimentos in a jar
- 1/2 tsp garlic powder
- 1/2 tsp kosher salt
- 1/4 tsp paprika
- 1/4 tsp ground red pepper (optional)
- 1 tsp hot sauce (optional)
- 3 cups cooked, shredded chicken
Instructions

Bake the biscuits according to package directions.

In a bowl, combine, cheese, mayo, pimentos, garlic powder, salt, paprika, and ground red pepper and hot sauce (if using). Stir until evenly mixed.

Add the cooked and shredded chicken to the pimento cheese and stir until combined.

When the biscuits are cooked and at room temperature, slice them in half and add pile the pimento cheese chicken mixture on the bottom halves and place the top halves over top to make a sandwich.
