Pimento Goat Cheese Spread
I had to put some sort of twist on traditional pimento cheese by turning it into a Pimento Goat Cheese Spread recipe.
You know by now that I rarely make things traditional.
Cream cheese is sometimes included in this southern spread, along with mayo, pimentos and shredded cheese.
So my mind went straight to using spreadable goat cheese to add a little extra something.
This spread is so good on sandwiches or crackers.
It would be a great dish to bring to a party because it’s easy to make and served cold or room temp.
How to Make Pimento Goat Cheese Spread
The main ingredients are a bag of shredded cheddar cheese, a 4 ounce log of spreadable goat cheese, and of course the jar of diced pimentos.
Drain the extra liquid from the jar of pimentos before adding them to the spread.
And another little tip…it’s easier to mix if the goat cheese is at room temp.
Put everything into a large bowl and add some mayo.
And some garlic powder, paprika, a pinch of ground red pepper, kosher salt, pepper, and some hot sauce.
Add as much or as little hot sauce according to your spice preference.
Mix it all together and that’s basically it.
You can store it in the fridge if you won’t be serving it right away.
It’s extra pretty with a few chives over top 🙂
We had our Pimento Goat Cheese Dip as a poolside snack with crackers 🙂
But it’s super good on bread as a sandwich too!
YUM!
