Roasted Chicken Sausage and Veggies
Roasted Chicken Sausage and Veggies is not only a delicious recipe…it’s pretty healthy and easy to make.
It even gets bonus points in my opinion for being one of those one pan wonders!
Everyone loves a super easy clean up 🙂
Trying to eat a little on the lighter and healthier side isn’t always fun, but this dish is quite the exception!
How to make Roasted Chicken Sausage and Veggies
Most of the ingredients are pictured below.
The chicken sausage I used was Johnsonville apple sausage, but any already cooked chicken sausage would work.
One helpful hint is to chop everything in roughly the same size chunks so it all cooks evenly.
We’re not looking for perfection here, just attempt one to one and a half inch chunks and it’s okay if there’s a big one here and a little one there.
Next place all this yumminess on a lined baking sheet with some olive oil, balsamic vinegar, garlic powder, kosher salt, pepper, and crushed red pepper flake if you like a little spice.
Toss it all together and into the oven it goes.
I did sprinkle a little extra kosher salt and pepper over top.
This will roast in a 425 degree oven for 35 to 40 minutes.
Toss it halfway through cooking as well.
If you like your veggies a bit more charred you could turn the broiler on high during the last minute or so of cooking.
Then sprinkle some crumbled goat cheese and fresh basil over top.
The goat cheese melts slightly and makes everything creamy and extra yummy!
In my opinion the goat cheese takes regular chicken sausage and veggies to a whole new level of flavor.
And the basil adds a great freshness.
If you’re lucky enough to have leftovers of Roasted Chicken Sausage and Veggies, it heats up really well the next day for lunch!

Roasted Chicken Sausage and Veggies
A delicious and healthy dinner all on one sheet pan
Ingredients
- 1 package smoked chicken sausage (approx. 1 pound)
- 1 red pepper
- 1 yellow pepper
- 1 red onion
- 1 zucchini
- 2 Tbsps olive oil
- 1 Tbsp balsamic vinegar
- 1 tsp garlic powder
- kosher salt, pepper
- Optional: crushed red pepper flakes
- 4 oz crumbled goat cheese
- fresh basil
Instructions

Cut the smoked chicken sausage, red pepper, yellow pepper, red onion, and zucchini into 1 to 1 1/2 inch chunks. Place on a lined baking sheet.

Add the olive oil, balsamic vinegar, garlic powder, kosher salt, pepper, and crushed red pepper if using. Toss until evenly coated. Add more kosher salt and pepper over top if needed.

Place the baking sheet in a 425 degree oven for 35-40 minutes, toss the chicken sausage and veggies halfway through cooking.

Serve with crumbled goat cheese and basil over top.
