Smoked Bacon Wrapped Jalapenos
My husband and I like to get a little wild on the weekend and smoke a lot! Pork, ribs, tri tip, whole chickens, is what I’m talking about of course 😉 And in this case a recipe for Smoked Bacon Wrapped Jalapenos!
I gotta be honest, I was really not expecting the bacon to be fully cooked and maybe turn out a little chewy, but it turned out perfectly!
The bacon had a slight crisp, but not the same as if you pan fried it.
For me it had the perfect texture so I was pleasantly surprised!
How to Make Smoked Bacon Wrapped Jalapenos
This recipe starts out with 6 pretty large jalapenos.
Slice them in half and scrape away the seeds and white ribs with a spoon.
I always wear plastic gloves when working with jalapenos, as they tend to burn my skin slightly.
Some people are just extra sensitive I guess, and plastic gloves is an easy fix.
This cheesy goodness is what goes in each jalapeno.
It is just cream cheese, cheddar cheese, and BBQ seasoning.
It’s easier to mix if the cream cheese is at room temperature 🙂
Stuff each jalapeno half with the cheese mixture just like this…
Then wrap a whole piece of bacon around each jalapeno half.
Using bacon on the thinner side works best.
Plus a little more BBQ seasoning sprinkled over top.
On to the Traeger pellet grill or smoker set to 250 degrees for 2 hours.
I didn’t flip them or move them at all.
We have a Traeger so regulating the temperature is super simple.
.
At this point I wanted to just devour these right away…waiting was the hardest part!
The bacon crisps a bit more as they come to room temperature.
We had these Smoked Bacon Wrapped Jalapenos along with some smoked ribs and it was the perfect combo!
