Bacon Blue Cheese Slaw
We had burgers, baked, beans, and this easy side dish recipe for Bacon Blue Cheese Slaw that was truly a hit with everyone at our summer BBQ party.

We celebrated the most amazing father’s this past weekend, including my husband and of course, my dad!
One of the ways we celebrate in our family is making the BEST food for these special guys.
It’a a great way to jazz up traditional coleslaw.
And really adding bacon to anything just makes it better đŸ˜‰
How to Make Bacon Blue Cheese Slaw
Start with cutting a pound of bacon right into a skillet over medium heat for 7 to 10 minutes.
Stir it a few times throughout.
Once the bacon is done put the crumbles on a plate lined with paper towels.
Let it cool while you make the slaw.
So I did take some help from the store and bought a coleslaw mix that was already cut.
But I did make my own dressing.
3/4 cup mayo, 3 Tbsps red wine vinegar, and 2 Tbsps of sugar is all it takes.
Whisk it in a small bowl and voila…slaw dressing is done.
To the coleslaw mix, add a bunch of sliced green onions.
It gives a burst of color and a very subtle onion flavor.
Next up, add 6 ounces blue cheese crumbles.
And that pound of bacon from earlier.
Toss it together with tongs and you have Bacon Blue Cheese Slaw fit for kings, or at least for my husband and dad on Father’s Day đŸ˜‰
You can make this several hours ahead and store in the fridge until ready to be served.

Bacon Blue Cheese Slaw
Bacon Blue Cheese Slaw has a yummy coleslaw dressing and tossed with blue cheese crumbles and bacon for a delicious summer side dish
Ingredients
- 1 pound bacon
- 3/4 cup mayo
- 3 Tbsps red wine vinegar
- 2 Tbsps sugar
- 16 oz bag coleslaw mix
- 1 bunch green onions sliced
- 6 oz crumbled blue cheese
Instructions

Set a large skillet over medium heat and use kitchen scissors to cut the bacon into bite size pieces right into the skillet. Cook the bacon 7 to 10 minutes, stirring occasionally.

Remove the bacon and place on a plate lined with paper towels.

In a small bowl add the mayo, red wine vinegar, and sugar. Whisk until evenly mixed.

Put the cole slaw mix, bacon, green onions, and blue cheese in a large bowl. Add the dressing and use tongs to mix the slaw until it's evenly combined.

Refrigerate until ready to serve.
