Chicken and Waffle Casserole
My wheels started turning one day as I was making my recipe for Maple Waffle Breakfast Casserole how it would be to try a Chicken and Waffle Casserole.
I sure do love chicken and waffles!
Well there was only one way to find out…
And let me just tell ya, it was every bit as fabulous as I had hoped 🙂
Here is how to male Chicken and Waffle Casserole
The chicken part of this dish is a 25 ounce bag of frozen popcorn chicken.
Bake them in the oven according to the package directions.
And cut the bigger pieces of popcorn chicken in half.
Then toast up 8 Eggo waffles, cut them up and put them into a greased 9×13 casserole dish.
Also add the cooked popcorn chicken and shredded cheese.
Layer and toss all that together just like this.
Next whisk together 8 eggs, 1 1/4 cup milk, 1/2 cup pure maple syrup, and 1/4 cup Frank’s Red Hot Sauce.
Pour this mixture into the casserole dish with the chicken, waffles, and cheese.
Take the back side of a fork and gently press the waffles into the egg mixture.
Now this amazing casserole is ready for the oven.
It will bake in a 375 degree oven for 45 minutes.
A little tip…make sure the oven has cooled down from baking the popcorn chicken.
My chicken baked in a 450 degree oven so just be sure your oven has had time to cool to 375.
And now I present to you…drum roll please…Chicken and Waffle Casserole!!!
Let it cool for a few minutes, and then serve with more pure maple syrup and hot sauce drizzled over top.

Chicken and Waffle Casserole
Chicken and Waffle Casserole takes all the flavors of chicken and waffles but served as a casserole with a spicy maple syrup!
Ingredients
- 1 25 oz bag frozen popcorn chicken
- 8 Eggo waffles
- 1 1/2 cups shredded cheese (I used cheddar)
- 8 eggs
- 1 1/4 cup milk
- 1/2 cup 100% pure maple syrup
- 1/4 cup Frank's Red Hot Sauce
- Optional: extra maple syrup and hot sauce to drizzle over top when serving
Instructions

Bake the frozen popcorn chicken according to package directions.

Toast the waffles and then cut into cubes. Place into a greased/ buttered 9×13 baking dish. Add the cooked popcorn chicken (cut the larger pieces of chicken in half) and cheese and toss together until evenly combined.

In a bowl beat together the eggs, milk, maple syrup, and hot sauce. Pour over top the waffles, chicken and cheese. Using the back of a fork, press the waffles down into the egg mixture.

Bake in a 375 degree oven for 45 minutes. Serve with extra maple syrup and hot sauce on the side if desired.
