Ingredients
  • 1 25 oz bag frozen popcorn chicken
  • 8 Eggo waffles
  • 1 1/2 cups shredded cheese (I used cheddar)
  • 8 eggs
  • 1 1/4 cup milk
  • 1/2 cup 100% pure maple syrup
  • 1/4 cup Frank's Red Hot Sauce
  • Optional: extra maple syrup and hot sauce to drizzle over top when serving
Instructions
  1. Bake the frozen popcorn chicken according to package directions.

  2. Toast the waffles and then cut into cubes. Place into a greased/ buttered 9×13 baking dish. Add the cooked popcorn chicken (cut the larger pieces of chicken in half) and cheese and toss together until evenly combined.

  3. In a bowl beat together the eggs, milk, maple syrup, and hot sauce. Pour over top the waffles, chicken and cheese. Using the back of a fork, press the waffles down into the egg mixture.

  4. Bake in a 375 degree oven for 45 minutes. Serve with extra maple syrup and hot sauce on the side if desired.
