Smoked Sausage Beer Cheese Dip
This time around I tried a recipe for Smoked Sausage Beer Cheese Dip!
In the summer I use our smoker or Traeger pellet grill several times a week.
I have smoked lasagnas, LOTS of chicken wings, vegetables, and so much more.
Beer, cheese, and smoked meats are probably my husbands three favorite things in life (I mean, besides me of course đŸ˜‰ ).
So I knew this would be the perfect dip for him.
How to make Smoked Sausage Beer Cheese Dip
I began with a pound of spicy pork sausage and a diced onion in a skillet over medium heat.
Cook this for about 5 to 7 minutes and break the sausage apart as it cooks.
My goodness, it took all of my will powder to just keep from snacking on this spicy pork!
Grease a 12 inch cast iron skillet (or you could use a 9×13 foil pan) and add the cooked sausage and onions.
Next add cubed Velveeta cheese, shredded cheddar cheese, cream cheese, green chiles, dry mustard, and of course beer.
This smoked beer cheese dip will go into a 250 degree smoker for an hour and a half.
And stir it a few times throughout.
I set aside some of the sausage and chopped fresh cilantro to garnish.
Serve Smoked Sausage Beer Cheese Dip with fresh bakery bread, tortilla chips, or our favorite Fritos Scoops.
THIS was our dinner…and on a Monday!
So literally instead of actually serving this as an appetizer, it was more of a side dish to go along with our smoked wings.

Smoked Sausage Beer Cheese Dip
Smoked Sausage Beer Cheese Dip has spicy sausage, three different types of cheese, green chiles, and of course beer all smoked for an amazing dip!
Ingredients
- 1 pound spicy sausage (could also use mild sausage)
- 1 onion diced
- 1 32 oz block Velveeta cheese cut into cubes
- 1 8 oz block cream cheese
- 2 cups shredded cheddar cheese
- 2 4 oz cans diced green chiles
- 12 oz beer of choice
- 1 Tbsp dry ground mustard
- Optional: cilantro for garnish
Instructions

Set a skillet over medium heat and add the sausage and onion. Cook for 5 to 7 minutes, breaking it apart as it cooks.

Put the cooked sausage and onions into a 9×13 foil pan or a greased 12 inch cast iron skillet.

Put the Velveeta cheese, cream cheese, cheddar cheese, green chiles, beer, and dry mustard into the same foil pan or cast iron skillet.

Place on a smoker set to 250 degrees for 1 1/2 hours, stir it a few times throughout. Garnish with cilantro if desired.

Serve with fresh bread, tortilla chips, and/or Fritos Scoops for dipping.
