
Chicken Veggie Meal Prep with Homemade Healthy Ranch
This chicken veggie meal prep idea is a super simple, healthy, and delicious recipe.
It’s kind of like a cold veggie tray only without the guilt of dipping into a fat filled, high calorie ranch.
Chicken Veggie Meal Prep with Homemade Healthy Ranch is especially perfect for hot summer days when cooking something just doesn’t sound appealing at all 🙂
Start with making this Homemade Healthy Ranch Dressing by combining non fat greek yogurt, buttermilk, and a packet of dry ranch seasoning.
You won’t use all of it for this dish. So maybe plan a BLT Salad for the same week to use the remaining dressing.

Next up is making Super Simple Shredded Chicken.
A little olive oil, kosher salt, and pepper on both sides of the chicken.
Bake in the oven, then shred it up.
It doesn’t sound nearly as amazing as it tastes.
But I pinky promise you it’s delicious!
I make it often and use it throughout the week.
It will be eaten cold and dipped in the ranch along with the veggies.
Just divide all of this goodness up into containers and store Chicken Veggie Meal Prep bowls in the fridge until you need them 🙂

Chicken Veggie Meal Prep with Homemade Healthy Ranch
A fresh, easy, and delicious meal prep idea!
Ingredients
- 2 chicken breasts
- olive oil, kosher salt, pepper
- 1 red bell pepper
- 1 yellow red pepper
- 2 carrots
- 1 pint grape tomatoes
- 2 5.3 oz containers non fat plain greek yogurt
- 6 oz buttermilk
- 1 packet dry ranch seasoning
Instructions

Put the chicken in a baking dish, drizzle with olive oil and sprinkle kosher salt and pepper on both sides. Bake in a 400 degree oven for 40 minutes. Let cool and shred the chicken.

Slice the peppers and carrots. Divide the shredded chicken, peppers, carrots, and tomatoes between 4 containers.

In a bowl whisk together the non fat plain greek yogurt, buttermilk, and packet of dry ranch seasoning until evenly mixed. Put the ranch into 2 oz cups with lids and put those into the meal prep containers. Place the remaining ranch into a container and into the fridge for future use.

When serving, dip the cold chicken and veggies into the homemade ranch dressing.
