A fresh, easy, and delicious meal prep idea!
Put the chicken in a baking dish, drizzle with olive oil and sprinkle kosher salt and pepper on both sides. Bake in a 400 degree oven for 40 minutes. Let cool and shred the chicken.
Slice the peppers and carrots. Divide the shredded chicken, peppers, carrots, and tomatoes between 4 containers.
In a bowl whisk together the non fat plain greek yogurt, buttermilk, and packet of dry ranch seasoning until evenly mixed. Put the ranch into 2 oz cups with lids and put those into the meal prep containers. Place the remaining ranch into a container and into the fridge for future use.
When serving, dip the cold chicken and veggies into the homemade ranch dressing.
