Mini Baked Taco Quesadillas
Mini Baked Taco Quesadillas are a quick and easy dinner recipe that the whole family will love!
Such a fun spin on regular taco night, and the kids can even help make them 🙂
What makes these “mini” you may ask…it’s the cute, little street taco size tortillas 🙂
How to make Mini Baked Taco Quesadillas
I made a pound of taco meat first with one of those taco seasoning packets from the store.
To make this dinner go even quicker, you could make the meat a day or two ahead of time so it’s already ready.
Then lay 12 street taco tortillas flat on two lined baking sheets.
Brush them with a mixture of olive oil and chili powder and flip them over so the oiled side is down.
My son LOVES helping with this part, he calls it “painting” the tortillas.
A sprinkle of shredded cheese goes down first.
Then add some of the cooked taco meat.
And another layer of cheesy goodness.
Next top each one with another tortilla and brush (or “paint” 😉 ) more of the olive oil chili powder mixture.

These bake in a 450 degree oven for 10 to 12 minutes.
The extra hot oven makes them super crispy!
Serve these adorable Mini Baked Taco Quesadillas with whatever topping you prefer.
For our dinner I simply put some sour cream, salsa, hot sauce, and guacamole on the table and everyone topped their own 🙂

Mini Baked Taco Quesadillas
Mini Baked Taco Quesadillas are a huge hit with the whole family, adorable street taco size tortillas are turned into delicious little quesadillas!
Ingredients
- 1 pound ground beef, chicken, or turkey
- 1 packet taco seasoning
- 2 12 packs street taco tortillas (24 tortillas total)
- 3 Tbsps olive oil
- 1 tsp chili powder
- 3 cups shredded cheese
- Toppings of choice: lettuce, sour cream, salsa, hot sauce, etc.
Instructions

In a skillet over medium heat add the ground beef, chicken, or turkey. Cook 5 to 6 minutes, breaking it apart as it cooks. Add the taco seasoning according to the packet directions.

Line two baking sheets with foil or parchment paper. Place 6 tortillas flat on each sheet. Mix together the olive oil and chili powder and brush this mixture lightly over each tortilla, then flip each tortilla over so the oiled side is facing down.

Sprinkle some cheese on each tortilla, spoon the taco meat on each one, then top with more cheese. Place another tortilla over each and brush the top with remaining olive oil.

Bake in a 450 degree oven for 10 to 12 minutes. Serve with toppings of choice.
