Fritos Taco Casserole
Fritos Taco Casserole is an easy, cheap, delicious one pan dinner recipe that the whole family will love 🙂
I have a serious love for Fritos, and use them often to top taco soup, taco salads, as well as using them for any dip.
I had to include them in my casserole of course!
How to make Fritos Taco Casserole
Set a large skillet over medium heat to start, and even better if it’s a cast iron or oven proof skillet.
Add a pound of ground beef and cook that about 6 minutes.
Then add in a taco seasoning packet and water.
You could easily substitute ground chicken, turkey, or venison meat.
If you have your own taco seasoning you could certainly use that.
This dish could also be made with ground venison, chicken, or turkey.
Once the taco meat is ready to go, remove from heat and add in half a bag of Fritos.
The other half will be used to top this dish to add a crunch factor.
Add in also a can of corn, a jar of salsa, a cup of cheese, kosher salt, and pepper.
Black beans would also be a great addition!
Stir it all together until evenly combined.
If you have an ovenproof skillet, top with more cheese.
If your skillet is not ovenproof, transfer this into a casserole dish and then top with more cheese.
Into a 400 degree oven it goes for 15 to 20 minutes.
Since everything is cooked, it just need time to warm though and for the cheese to get melty.
Top your Fritos Taco Casserole with lettuce, sour cream hot sauce, and of course more Fritos!

Fritos Taco Casserole
Fritos Taco Casserole has taco meat mixed with Fritos, corn, cheese, and salsa all in an easy one pan meal!
Ingredients
- 1 pound ground beef
- 1 taco seasoning packet (or homemade taco seasoning)
- 2/3 cup water
- 1 9 1/4 oz bag Fritos
- 1 14 oz can corn drained
- 1 14 oz jar salsa
- 2 cups shredded cheese of choice (I used Mexican blend)
- kosher salt, pepper
- Toppings of choice: lettuce, sour cream, hot sauce
Instructions

Set a large cast iron or oven proof skillet over medium heat and add the ground beef. Cook 6 to 7 minutes or until brown, drain excess grease. Add the taco seasoning and 2/3 cup water. Cook a few more minutes and remove from heat.

Add to the skillet half the bag of Fritos, corn, salsa, 1 cup of the cheese, kosher salt, and pepper. Stir until evenly mixed. Top with remaining cheese and bake in a 400 degree oven 15 to 20 minutes.
Note: If your skillet is not oven proof, transfer this to a 9×13 casserole dish before topping with the cheese. Once it's in the casserole dish top with remaining 1 cup cheese and bake.

Serve with the remaining Fritos over top along with additional toppings such as lettuce, sour cream, and hot sauce.
