Fritos Taco Casserole has taco meat mixed with Fritos, corn, cheese, and salsa all in an easy one pan meal!

Ingredients
  • 1 pound ground beef
  • 1 taco seasoning packet (or homemade taco seasoning)
  • 2/3 cup water
  • 1 9 1/4 oz bag Fritos
  • 1 14 oz can corn drained
  • 1 14 oz jar salsa
  • 2 cups shredded cheese of choice (I used Mexican blend)
  • kosher salt, pepper
  • Toppings of choice: lettuce, sour cream, hot sauce
Instructions
  1. Set a large cast iron or oven proof skillet over medium heat and add the ground beef. Cook 6 to 7 minutes or until brown, drain excess grease. Add the taco seasoning and 2/3 cup water. Cook a few more minutes and remove from heat.

  2. Add to the skillet half the bag of Fritos, corn, salsa, 1 cup of the cheese, kosher salt, and pepper. Stir until evenly mixed. Top with remaining cheese and bake in a 400 degree oven 15 to 20 minutes.

    Note: If your skillet is not oven proof, transfer this to a 9x13 casserole dish before topping with the cheese. Once it's in the casserole dish top with remaining 1 cup cheese and bake.

  3. Serve with the remaining Fritos over top along with additional toppings such as lettuce, sour cream, and hot sauce.
