Smoked Bacon Wrapped Brie

Smoked Bacon Wrapped Brie has all the necessary components of a great appetizer recipe…bacon, cheese, and bread!

Now, you’d think how can the cheese not start oozing out of the bacon as it smokes for 2 hours, right?!

Brie cheese has a rind that is completely edible and that’s what makes it the perfect cheese to wrap in bacon.

I don’t think you’d get the same results if you sub a block of cheddar đŸ˜‰

How to Make Smoked Bacon Wrapped Brie

Only 2 ingredients are needed to start… literally just bacon and a round of brie cheese.

Start the bacon weave by laying 4 slices of bacon flat.

Then fold in the first and third slice toward the center and lay another piece of bacon going the opposite direction.

Place the folded bacon over the new slice and then fold the second and fourth slices back to place another vertical slice of bacon.

Repeat the bacon weaving 2 more times so you end up with 8 slices total of weaved bacon.

Next step is to place the brie cheese in the center.

And fold the bacon strips right over the cheese like this.

Carefully flip it over onto a plate and head to the smoker.

Set the smoker or Traeger pellet grill to 250 degrees to start.

And carefully place the bacon wrapped cheese on the grill grate with the weaved side facing up for 1 1/2 hours.

Toward the end of the cheese being done, slice a french baguette to start the crostini.

Lay them on a baking sheet and brush with olive oil and a sprinkle of kosher salt and pepper.

Into a 400 degree oven for 5 minutes to get them nice and toasted.

After 1 1/2 hours on the smoker, raise the heat to 325 degrees for an additional 30 minutes.

This will help get the bacon crispy. Just keep an eye on it, though.

Mine did just fine but I gotta say I was a little nervous with the higher heat that either the cheese would melt out or that the bacon would cook too much.

To serve, place it in the center of a tray or cutting board.

And spoon some red pepper jelly around it.

We had the best luck using a fork to cut into the cheese.

Smoked Bacon Wrapped Brie is an incredible and stunning appetizer, serve it with red pepper jelly and crostini to make your own perfect bite

Ingredients

  • 8 slices bacon
  • 8 oz brie cheese
  • 1 french baguette
  • olive oil, kosher salt, pepper
  • 8 oz red pepper jelly

Instructions

  1. Lay 4 slices of the bacon next to each other. Weave the other 4 slices in the center of the slices laying flat (picture examples in post above).

  2. Place the brie cheese in the center of the weaved bacon. Wrap the outer pieces of bacon over the cheese.

  3. Set the smoker to 250 degrees. Place the wrapped brie with the weaved bacon side up. Smoked the brie at 250 degrees for 1 1/2 hours, raise the heat to the smoker to 325 degrees for another 1/2 hour.

  4. While the brie is on the smoker, slice the french bread and place the slices of bread on a baking sheet. Brush the tops with olive oil and sprinkle kosher salt and pepper over top. Bake in a 400 degree oven for 5 minutes.

  5. Serve the brie with red pepper jelly and the toasted bread slices. Use a fork to cut into the bacon wrapped brie and top the bread with some of the bacon, brie, and red pepper jelly.
