Easy Shrimp Po Boys

To say these easy shrimp po boys were a hit at dinner is a huge understatement!

“Mom, this is seriously one of the best dinners you’ve ever made!’ and “Oh wow, how did you make this so good?!”

These were just few of the quotes that I heard at the table as everyone devoured these in record time.

Sometimes on the weekends I don’t mind spending a little extra time on my recipes.

But then there are times where all you need in your life are easy and simple.

So I’ll teach you a few tips and tricks along with some store bought ingredients so you too can have a fun, delicious, and EASY seafood night at home!

How to make easy shrimp po boys

Don’t judge friends, the shrimp for these are actually store bought frozen and breaded popcorn shrimp.

I mean, hey, you’re the one that clicked on the “easy” recipe for this classic sandwich so I’m sure you’re not too appalled by the frozen shrimp đŸ˜‰

Cook the shrimp in either the oven or air fryer according to package directions.

Mine cooked in the air fryer at 400 degrees for about 12 to 15 minutes.

That’s pure golden crunchy deliciousness right there!

This next trick brings a little extra flavor and freshness, so I recommend not skipping this part.

A little sprinkle of Old Bay seasoning over the shrimp right after they come out of the oven or air fryer and also a squeeze of fresh lemon juice.

My other tip is making sure that the lettuce is a VERY thinly sliced or shredded.

The thin strips of lettuce give that restaurant quality vibe it makes for a fairly traditional po boy.

I used a mandolin but you could also use a very sharp knife to get that lettuce as thinly sliced as possible.

You can toast for sub buns or serve them right out of the package, I went with slightly toasted King’s Hawaiian mini sub rolls.

The first step to building these beautiful sandwiches is piling the popcorn shrimp on the bottom bun.

Then a good drizzle of either store bought remoulade sauce or you can make your own homemade old bay aioli.

I went with the store bought sauce on this particular evening.

But if you do want to make the aioli it’s simply mayo, garlic powder, lemon juice, old bay seasoning, and a few dashes of your favorite hot sauce.

We had our easy shrimp po boys with a side of tater tots that I made in the air fryer for a complete and simple dinner!

In addition to the thinly sliced lettuce you can add other toppings such as pickles and tomatoes.

Just by looking at this plate you would seriously doubt that this took almost zero effort and a total of about 15 minutes.

Fair warning though these are messy… as all po boys should be đŸ˜‰

Easy Shrimp Po Boys, this recipe has a few secret tricks and ingredients to make the easiest shrimp po boy for seafood night at home!

Ingredients

Easy Shrimp Po Boys

  • 1 12 oz box frozen, breaded popcorn shrimp
  • Old Bay seasoning, lemon wedges
  • 4 sub rolls (I used King's Hawaiian Mini Sub Rolls)
  • 1 1/2 cups thinly shredded lettuce
  • store bought remoulade sauce or Old Bay Aioli
  • Optional toppings: pickles, tomatoes

Old Bay Aioli

  • 1/2 cup mayo
  • 1 tsp Old Bay seasoning
  • 1 tsp garlic powder
  • 1 tsp lemon juice
  • a few dashes of your favorite hot sauce (I used Tabasco)

Instructions

Easy Shrimp Po Boys

  1. Cook the shrimp in the oven or air fryer according to the package directions. I cooked mine in the air fryer at 400 degrees for about 12 to 15 minutes.

  2. When the shrimp are finished cooking season them with Old Bay seasoning and squeeze some lemon wedges over top of the shrimp.

  3. Toast your sub rolls if desired and build each po boy with a bottom layer of the cooked and seasoned popcorn shrimp, remoulade sauce or old bay aioli, thinly shredded lettuce, and toppings of choice like pickles or tomatoes if desired.

Old Bay Aioli

  1. Put all of the ingredients for the aioli in a bowl and stir until combined.
