Ingredients
  • 1 cup teriyaki sauce (I used Kikkoman Teriyaki with no high fructose corn syrup)
  • 2 pounds salmon (cut into fillets)
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 red onion
  • 1 head broccoli
  • 1 large carrot
  • 1 tsp garlic powder
  • 1/2 tsp crushed red pepper flakes
  • Optional: sesame seeds for garnish, rice, Sriracha
Instructions
  1. Pour 1/2 cup of the teriyaki sauce in a shallow dish and place the salmon fillets skin side up in the dish. Marinate for 30 minutes.

  2. Cut the red bell pepper, yellow bell pepper, and red onion into 1 inch pieces. Trim the broccoli into similar size florets. Peel the carrot and cut into 1/4 inch slices.

  3. Place all of the veggies on a large, lined baking sheet. Sprinkle the garlic powder and crushed red pepper flakes over top and drizzle the remaining 1/2 cup teriyaki sauce. Toss until evenly mixed.

  4. Scoot the veggies to the outer edges of the baking sheet and place the salmon fillets in the center of the pan, pour the remaining marinade over the salmon. Arrange the veggies in a single layer around the salmon.

  5. Bake in a 400 degree oven for 18 to 20 minutes, turn the broiler on high during the last two minutes.

  6. Sprinkle with sesame seeds if desired, and serve as is or over rice with Sriracha if desired.
