Ingredients
  • 1 red bell pepper sliced
  • 1/2 red onion sliced
  • 8 ounces sliced mushrooms
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil (plus more to brush on the wraps)
  • 1 tablespoon dried oregano
  • 1/2 tablespoon garlic powder
  • kosher salt, pepper
  • 2 large soft tortilla wraps (I used Ole Extreme Wellness)
  • cheese of choice (I used a mix of goat cheese and mozzarella)
  • balsamic glaze (vinegar section of grocery store)
Instructions
  1. Put the bell pepper slices, onions, and mushrooms in a bowl. Add the balsamic vinegar, olive oil, oregano, garlic powder, kosher salt, and pepper. Toss until combined and put the seasoned veggies in the air fryer.

  2. Set the air fryer to 390 degrees for 14 to 16 minutes. Let the veggies cool slightly and remove from the air fryer, wipe the air fryer basket clean.

  3. Put some cheese of choice in the center of each tortilla wrap, the veggies, and a drizzle of balsamic glaze. Fold the sides in and roll into a wrap.

  4. Brush the wraps with olive oil, place back into the air fryer seam side down. Set the air fryer to 390 degrees for 3 to 5 minutes or until they are crisped how your prefer.
