Blackstone Chicken Teriyaki

Blackstone Chicken Teriyaki is one of the healthier recipes I have made on my Blackstone Griddle.

I do get asked that a lot… what are some healthy options to make on the griddle.

You could easily serve this with rice or just like this.

SO much flavor with just a few ingredients, especially when using boneless, skinless chicken thighs!

How to Make Blackstone Chicken Teriyaki

The marinade for the chicken is simply teriyaki sauce and minced garlic.

I like this brand because it has no high fructose corn syrup.

Cut about 1 1/2 pounds boneless, skinless chicken thighs into bite size pieces and mix it together with 1/4 cup of the teriyaki sauce and the garlic.

Usually I marinate in a gallon size plastic bag, but I ran out so a container with a lid will have to do.

Ideally, marinate this in the fridge overnight.

But at least for an hour.

When ready to make this dish, set out the chicken and veggies.

I am using a red bell pepper, yellow bell pepper, mushrooms, and an onion.

You can mix it up with any veggies you like, though 🙂

Slice all the gorgeous veggies and set everything on a tray.

The tray makes for easily transporting everything outside to your Blackstone griddle.

Preheat the griddle for several minutes to medium/ medium high heat.

Put some vegetable oil down first and then the chicken and veggies.

Add more teriyaki sauce, kosher salt, and pepper as well.

Using hibachi spatulas, toss and flip the chicken and veggies a few times as this cooks.

It will take about 7 to 9 minutes total.

Once the chicken is cooked and the veggies are done to your liking you can remove and place back on the same tray you carried outside.

Using a tray to bring things in and out is one of my favorite griddle tricks.

Add some sesame seeds too if you like!

They add a nice pop to the presentation, and also a slight nutty flavor and crunch.

Serve Blackstone Chicken Teriyaki with more sesame seeds, green onion, and more teriyaki sauce if desired 🙂

This little stir fry dinner was amazing, and was super simple to make on the griddle.

We were lucky enough to have leftovers, which were just as good the next day!

Ingredients

  • 1 1/2 pounds boneless, skinless chicken thighs (or chicken breasts)
  • 4 cloves garlic minced
  • 1/2 cup teriyaki sauce
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 onion
  • 8 oz mushrooms
  • vegetable oil for the griddle
  • kosher salt, pepper
  • Optional: sesame seeds, green onions, more teriyaki sauce

Instructions

  1. Cut the chicken into inch size cubes, place in a gallon size plastic bag along with the minced garlic and 1/4 cup of the teriyaki sauce. Massage the bag until evenly mixed. Marinate in the fridge at least an hour or overnight.

  2. Thinly slice the bell peppers, onion, and mushrooms.

  3. Turn your Blackstone griddle on and set it to medium/ medium high heat. Once preheated, add some oil and the chicken, veggies, and remaining 1/4 cup teriyaki sauce. Season lightly with kosher salt and pepper.

  4. Cook 7 to 9 minutes, tossing a few times.

  5. Serve with sesame seeds, green onions, and more teriyaki sauce if desired.
