Thai Chicken Noodle Soup

When your adult child is sick, you bring her homemade chicken noodle soup…right?! Well, I actually brought her a recipe for Thai Chicken Noodle Soup because she loves Thai curry paste and Asian flavors so much.

I delivered it to her house and already got a text saying how much she loved it by the time I got home.

And this momma ain’t no fool…I saved plenty for myself and husband too đŸ˜‰

How to Make Thai Chicken Noodle Soup

This soup starts with some vegetable oil or sesame oil in a large soup pot, and then add a diced onion, diced red pepper, and a grated carrot.

Let this cook about 8 minutes.

Next add LOTS of flavorful ingredients… garlic, Thai red curry paste, Sriracha, soy sauce, lime juice, lite coconut milk, and chicken broth.

Let that come to a boil and then reduce the heat and simmer for 5 minutes.

Then add cooked, shredded chicken and the ramen noodles.

I prefer these Nissin Raoh noodles, and with the flavor packet removed.

So literally just the noodles go into the soup.

After another five minutes or so of simmering the noodles should be perfectly cooked.

At the very end add a bunch of freshly chopped cilantro.

To serve Thai Chicken Noodle Soup, top with more cilantro, a lime wedge to squeeze over top, diced avocado, and chopped peanuts for some crunch.

Personally I add more Sriracha as well because I love some extra spice đŸ™‚

Thai Chicken Noodle Soup puts an Asian twist on chicken noodle soup using Thai curry paste, soy sauce, and using ramen noodles!

Ingredients

  • 1 Tbsp vegetable or sesame oil
  • 1 onion diced
  • 1 red pepper diced
  • 1 large carrot shredded or grated
  • 6 cloves garlic minced
  • 2 Tbsps Thai red curry paste
  • 2 Tbsps Sriracha
  • 4 Tbsps soy sauce
  • 2 Tbsps lime juice
  • 1 13.5 oz can lite coconut milk
  • 6 cups chicken broth
  • 3 cups cooked, shredded chicken
  • 2 3.5 oz packages Nissin Raoh Ramen Noodles (noodles only, no flavor packet)
  • 1 bunch fresh cilantro chopped
  • Optional toppings: more cilantro, lime wedges, avocado, chopped peanuts, more Sriracha

Instructions

  1. Set a large soup pot over medium and add the oil. Once the oil is hot add the onion, red pepper, and carrot. Cook 5 to 8 minutes, stirring occasionally.

  2. Add the garlic, red curry paste. Sriracha, soy sauce, lime juice, coconut milk, and chicken broth. Bring to a boil, reduce heat to simmer for 5 minutes.

  3. Add the cooked, shredded chicken and ramen noodles. Bring to a boil and reduce heat to simmer 5 more minutes. Turn the heat off and stir in the fresh cilantro.

  4. Serve with more cilantro, lime wedges, diced avocado, chopped peanuts, and more Sriracha if desired.
