Ingredients
  • 2 tablespoons olive oil
  • 1 onion diced
  • kosher salt, pepper, crushed red pepper flakes
  • 8 cloves garlic minced
  • 1 pound ground Italian sausage casings removed
  • 4 cups chicken broth
  • 1 (28-ounce) can crushed tomatoes
  • 2 tablespoons Italian seasoning
  • 6 ounces fresh spinach chopped
  • 1 cup heavy cream
  • 4 to 5 ounces uncooked spaghetti broken into inch pieces
  • 1/3 cup grated parmesan cheese
Instructions
  1. Set a large soup pot over medium heat. Add olive oil, onion, kosher salt, pepper, and crushed red pepper flakes. Cook 5 minutes, stirring a few times.

  2. Add garlic and sausage. Cook 5 more minutes, breaking apart sausage.

  3. Add chicken broth, tomatoes, Italian seasoning, more kosher salt, pepper, and crushed red pepper flakes. Raise heat to high to boil, then reduce heat to medium low and simmer 15 minutes, stirring a few times.

  4. Add spinach, cream, and spaghetti. Cook 10 to 15 more minutes, stirring a few times. Taste for seasoning and add more kosher salt, pepper, crushed red pepper flakes, and/or Italian seasoning if needed.

  5. Serve in bowls with parmesan cheese sprinkled over top.
