
Roasted Grape Goat Cheese Salads
A unique, delicious, meatless salad recipe with a meal prep option is what I am sharing today… Roasted Grape Goat Cheese Salads are incredible!
This is a great vegetarian dinner or lunch without that boring salad feel, but you of course don’t have to be a vegetarian to enjoy them.
An easy to make homemade salad dressing compliments all the flavors of this healthy meal.

How to make Roasted Grape Goat Cheese Salads
First we will make the balsamic dressing in either a bowl or small mason jar.
It’s just 1/3 cup olive oil, 3 tablespoons balsamic vinegar, a tablespoon of Dijon mustard, a little honey or sugar, kosher salt, and pepper.
Just whisk until combined, or shake if you’re using the mason jar.

Then put 3 cups of red grapes on a lined baking sheet.
You’ll really want to line that sheet with foil for easy cleanup 🙂
Then add a few spoonfuls of the salad dressing.

And toss the grapes in the dressing until they are coated.

Then just roast them in a 450 degree oven for 25 to 30 minutes.
Let them cool before adding them to the salads.

While the grapes cool, divide 4 to 5 cups of salad mix between 2 bowls or meal prep containers.
I made one for my dinner and meal prepped one for my lunch the next day.

Finally, divide the roasted grapes, crumbled goat cheese, and walnuts between the two salads, and top with the homemade dressing.
As you can see, I put the dressing on the side for the meal prep salad.

Roasted Grape Goat Cheese Salads is a vegetarian/ meatless salad recipe with a healthy homemade dressing, this is not your average salad!
Ingredients
- 1/3 cup olive oil
- 3 tablespoons balsamic vinegar
- 1 tablespoon Dijon mustard
- 2 teaspoons sugar or honey
- kosher salt, pepper
- 3 cups red grapes
- 4 to 5 cups salad mix of choice
- 3 to 4 ounces goat cheese crumbles
- 1/2 cup walnuts
Instructions

Put the olive oil, balsamic vinegar, Dijon, sugar or honey, kosher salt, and pepper in a bowl and whisk until combined (or in a mason jar and shake until combined).

Put the grapes on a lined baking sheet with a few spoonfuls of the dressing. Toss until coated. Put in a 450 degree oven for 25 to 30 minutes. Let cool.

Divide the salad mix between two bowls or meal prep containers. Top each salad with the roasted grapes, goat cheese crumbles, walnuts, and salad dressing (put the dressing in 2 ounce cups with lids if meal prepping).
