Peach Bourbon BBQ Grilled Chicken

I still can’t get over how insanely delicious this Peach Bourbon BBQ Grilled Chicken recipe was!

This grilled chicken may be up there with my all time favorites!

I’m allowed to pick favorites, right?!

I sure hope so because this one may win.

It’s a super easy dinner to prepare as well…if that’s a ranking factor when picking favorites đŸ˜‰

Boneless, skinless chicken thighs are my chicken cut of choice.

They have extra flavor and don’t dry out like chicken breasts have a tendency to do.

Here’s how to make Peach Bourbon BBQ Grilled Chicken…

First put the chicken in a gallon size plastic bag (this is four pounds that I trimmed up a bit).

Along with olive oil, your favorite BBQ seasoning, and crushed red pepper flakes.

Then massage the bag until evenly combined and marinate in the fridge a few hours or overnight.

The BBQ sauce can be made ahead of time if you prefer.

Start by adding to a saucepan some BBQ sauce, peach jelly, peach bourbon, and more crushed red pepper flakes.

The pepper flakes add a much needed spice to such a sweet BBQ sauce.

Then bring to a boil, whisk often, and then let it simmer for a few minutes.

It smells like pure heaven, and I would highly recommend someone create a peach bourbon BBQ scented candle or something!

Once the chicken is done marinating place it on your grill set to medium high heat, with the grill grates nice and oiled.

Then sprinkle with kosher salt and pepper.

Grill the chicken about 5 to 6 minutes per side, and brush some of the BBQ sauce on it several times as you grill.

As I was already grilling the Peach Bourbon BBQ Grilled Chicken I thought why not also grill some asparagus.

Put olive oil, kosher salt, and pepper on the asparagus.

And they only take about 5 minutes on the grill, turning a few times.

Now you have a gorgeous, complete summer meal đŸ™‚

Oh, and here’s what we did with the leftover chicken…

We made chicken salads with just lettuce, cut up chicken, and cheese and made a dressing by mixing together this BBQ sauce with ranch!

So good and easy!

Ingredients

  • 3 pounds boneless, skinless chicken thighs (or breasts)
  • 1 Tbsp olive oil
  • 3 Tbsps BBQ seasoning
  • 1 1/2 tsps crushed red pepper flakes
  • 1 1/2 cups BBQ sauce
  • 1/2 cup peach jelly
  • 1/2 cup peach bourbon
  • kosher salt, pepper

Instructions

  1. Trim extra fat from the chicken thighs if desired and put them in a gallon size plastic bag.

  2. Add the olive oil, BBQ seasoning, and 1 tsp crushed red pepper flakes to the bag. Massage the bag until evenly combined and marinate in the fridge a few hours or overnight.

  3. Add the BBQ sauce, peach jelly, peach bourbon, and remaining 1/2 tsp crushed red pepper flakes to a small saucepan. Bring to a boil and reduce heat and simmer 3 minutes, stirring a few times.

  4. Set the grill to medium high. Put the chicken on the grill, sprinkle with kosher salt and pepper, and cook 5 to 6 minutes per side, brush with the sauce a few times throughout.

  5. Serve the chicken with the remaining Peach Bourbon BBQ sauce.
