Roasted Red Pepper and Parmesan Shrimp

Roasted Red Pepper and Parmesan Shrimp was one of the recipes I made for this Friday night snack fest.

On the weekends I don’t make very traditional meals.

I like to make more appetizer-ish food and we have a fun snacky-snack dinner.

You could certainly turn this into more of a meal by adding a side salad or a side of pasta.

Bonus points for this dish being amazingly simple with only 5 ingredients!

The jar of pesto and the roasted red peppers both save tons of time while not sacrificing flavor.

The only thing I did to the peppers was drained them and put them in my food processor for a few seconds, blending just until smooth.

Here is how to make Red Pepper and Parmesan Shrimp

First up is patting a pound of jumbo shrimp dry with paper towels.

Then heat a skillet on medium high heat and add olive oil and the shrimp.

Sprinkle with kosher salt and pepper and let them cook a total of 3 to 4 minutes.

Turning them as they cook.

Once cooked remove them from the skillet and set aside.

This dish is served with some sort of bread for dipping all of the incredible sauce.

As the shrimp cooked I sliced a loaf of french bread, brushed with olive oil, salt, and pepper.

Then baked it for about 6 minutes in a 375 degree oven.

In the same skillet over medium high heat add the jar of pesto, the blended roasted red peppers, parmesan cheese, and crushed red pepper flakes.

Let this cook for just a minute or two.

Then add the cooked shrimp back into the skillet.

Stir it around a bit and it’s ready to go 🙂

Serve Roasted Red Pepper and Parmesan Shrimp with the toasted baguette for dipping the extra sauce.

Ingredients

  • 1 pound jumbo shrimp peeled and deveined
  • 1 12 oz jar roasted red peppers
  • 1 Tbsp olive oil
  • kosher salt, pepper
  • 1 8 oz jar pesto minced
  • 1/4 cup grated parmesan cheese (plus more to sprinkle over top)
  • 1 tsp crushed red pepper flakes
  • slices of toasted baguette/crostini

Instructions

  1. Pat the shrimp dry with paper towels.

  2. Drain the jar of roasted red peppers and put the peppers in a blender or food processor. Blend 15 to 20 seconds or until smooth.

  3. Set a skillet over medium high heat, add the olive oil and when oil is hot add the shrimp and sprinkle with kosher salt and pepper. Cook 3 to 4 minutes, stirring occasionally. Remove the shrimp from the skillet.

  4. Add the blended red peppers to the same skillet over medium heat, add the pesto, parmesan cheese and crushed red pepper flakes. Cook 1 to 2 minutes, stirring occasionally. Add the shrimp and stir until evenly mixed.

  5. Serve with toasted baguette/ crostini and with more parmesan cheese sprinkled over top.
