Goat Cheese Caramelized Onion Pasta

If you follow me, you know I am cooking with caramelized onions this week… and my newest recipe creation is Goat Cheese Caramelized Onion Pasta!

I made a huge batch of Slow Cooker Caramelized Onions and have used them (so far) to make this pasta dish and Steak and Caramelized Onion Flatbreads 🙂

It seemed like a perfectly good idea to add bacon to this creamy, cheesy pot of comfort food.

And for the pasta I am using ziti, but really any pasta will work.

Bonus points for this being a complete ONE POT meal.

How to Make Goat Cheese Caramelized Onion Pasta

First up is making the pasta in a large pot according to the package directions.

Drain the pasta and rinse with cold water to prevent it from becoming mushy.

Then set that same large pot over medium heat.

Use kitchen scissors to cut a pound of bacon right into the pot.

Once the bacon is cooked put it on a plate lined to with paper towels to soak up the extra grease.

Discard the bacon grease and put that same pot over medium heat again (see told ya…one pot meal right here 😉 ).

Add a Tablespoon of butter and once that has melted, add some garlic and cook that for a minute.

Then pour in a pint of heavy cream.

Once that starts to bubble, cook for 4 to 5 minutes, stirring a few times.

And here comes the cheese!

A cup of parmesan and 4 ounces goat cheese.

Season with kosher salt and pepper, and stir until melted.

Finally, add in the cooked pasta, caramelized onions, and bacon.

I did save some bacon to garnish while serving.

Give it a stir and voila… it’s time to devour this masterpiece!

Ingredients

  • 1 pound pasta of choice (I used ziti)
  • 1 pound bacon
  • 1 Tbsp butter
  • 4 cloves garlic minced
  • 1 pint heavy cream
  • 4 oz goat cheese (I used spreadable)
  • 1 cup grated parmesan cheese
  • kosher salt, pepper
  • 2 cups caramelized onions (link to Slow Cooker Caramelized Onions in post above)
  • Optional: parsley for garnish

Instructions

  1. Boil the pasta in a large pot according to the package directions. Drain the pasta and rinse with cold water, set aside.

  2. Put the same large pot over medium heat. Use kitchen scissors to cut the bacon into the pot. Cook 8 to 9 minutes, remove the bacon and place on a plate lined with paper towels. Discard any leftover bacon grease.

  3. Set the same large pot over medium heat and add the butter, once the butter is melted add the garlic. Cook 1 minute.

  4. Add the cream, bring to a boil and reduce the heat to simmer for 4 to 5 minutes.

  5. Add the goat cheese, parmesan cheese, kosher salt, and pepper stir until melted, then stir in the caramelized onions, cooked pasta, and bacon crumbles.

  6. Serve with parsley as garnish if desired.
