Slow Cooker Caramelized Onions

It’s “Caramelized Onion” week in our house…so the first recipe to make would, of course, be Slow Cooker Caramelized Onions!

My daughter LOVES caramelized onions, and she’s constantly giving me ideas of what to make with them.

Well, friends…this week her dreams are coming true.

I will update this post with links to following recipes that I plan to make this week.

You can also freeze these onions for a few months.

So even if you’re not crazy like me and making EVERYTHING in a week with these, still make the whole batch and freeze them.

How to Make Slow Cooker Caramelized Onions

This may seem like a lot of onions, but they reduce in size so much that really at the end you have about 6 cups of caramelized onions.

So yes, we are going to peel and thinly slice EIGHT yellow onions 🙂

If your eyes are sensitive, get some goggles or safety glasses.

Honestly if you have a super sharp knife the cutting should be pretty painless.

And yellow onions are fairly mild.

I like to cut the ends off and peel them, then cut in half to have a flat surface on the cutting board.

Then thinly slice, again a good quality knife helps so much.

Once the onions are cut, transfer them to the crock pot/ slow cooker.

Next set out some brown sugar, balsamic vinegar, butter, kosher salt, pepper, and crushed red pepper flakes.

Add 1/3 cup each of the brown sugar and balsamic vinegar.

Cut 4 Tablespoons butter into smaller pieces and add those in too.

Then season with kosher salt, pepper, and crushed red pepper flakes.

Turn the slow cooker on low for 8 to 10 hours, stirring a few times throughout.

This is what you’ll see about halfway through cooking.

Keep letting it go a few more hours, and keep stirring.

It’s kinda cool seeing the process of caramelizing each time you stir.

In addition to the recipes at the top of this post (which I will link them as I make them this week)…

Might I suggest:

Burger topping

In a grilled cheese

French Onion Soup

As a quesadilla filling

Pizza Topping

Or simply add to grilled steak or chicken (maybe with some blue cheese) YUM!

And freeze any leftovers for a few months to always have them on hand 🙂

Slow Cooker Caramelized Onions

Slow Cooker Caramelized Onions is the easiest way to make caramelized onions to use in soups, dips, or to use as in grilled cheese or burger topping

Ingredients

  • 8 yellow onions
  • 1/3 cup balsamic vinegar
  • 1/3 cup brown sugar
  • 4 Tbsps butter
  • kosher salt, pepper, crushed red pepper flakes

Instructions

  1. Peel the onions and thinly slice them.

    Note: A sharp knife is important. I cut the ends off of mine, cut them in half, peeled the outer layer and placed them cut side down to slice them.

  2. Place the thinly sliced onions in a slow cooker. Add the balsamic vinegar and brown sugar. Cut the butter into smaller pieces and add the butter. Season with kosher salt, pepper, and crushed red pepper flakes.

  3. Turn the slow cooker on low for 8 to 10 hours, stirring a few times throughout.

  4. Use the caramelized onions to make soups, dip, add to grilled cheese or quesadillas, or as a burger topping.

    Note: Extra caramelized onions will stay good in the fridge for a few days in a container with lid, or you can freeze them for up to three months.
