Sesame Ginger Meatball Sliders

These Sesame Ginger Meatball Sliders are not your typical little slider sandwich recipe.

They are jam packed full of bold flavors and they are monstrous in size.

Smashing them down and maybe a Guy Fieri hunch is recommended to be able to take a bite, but that just adds to the fun of this dish.

You could make the meatballs smaller, but why not live a little and go BIG or go home?!

How to Make Sesame Ginger Meatball Sliders

You could use ground chicken or pork for these mighty meatballs.

A pound of ground chicken is what I used.

Along with 1/2 cup shredded carrots and panko breadcrumbs, 1/3 cup sliced green onions, 2 tablespoons soy sauce and ginger, a tablespoon each garlic and sesame seeds, an egg and kosher salt and pepper.

Just add everything to a large bowl.

Use your hands to gently mix everything together until combined.

Then form into 8 large meatballs.

Place them on a baking sheet or casserole dish.

They will be rather delicate, but they will bake up to perfection đŸ™‚

I sprinkled some extra sesame seeds over top.

It made them prettier and more sesame-ish.

Bake the meatballs in a 400 degree oven for 27 to 32 minutes or until they are 165 degrees in the center.

While the meatballs cool slightly, make the slaw and toast the slider buns.

For the slaw I combined some Asian salad kit with sriracha mayo, diced mango, and lime juice.

Put some of the slaw over the bottom half of each toasted slider bun.

Then place the enormous sesame ginger meatballs over top.

You’ll question the madness at this point, but remember we will smash the top slider bun over top to make these more manageable đŸ˜‰

More sriracha mayo over each meatball and then add the top slider bun, and maybe with a toothpick to secure them in place.

Ingredients

  • 1 pound ground chicken or pork
  • 1/2 cup panko bread crumbs
  • 1/2 cup shredded carrots
  • 1/3 cup sliced green onions
  • 2 Tbsps soy sauce
  • 2 Tbsps ginger paste
  • 1 Tbsp garlic paste
  • 1 Tbsp sesame seeds (plus more to sprinkle over top)
  • 1 egg
  • kosher salt, pepper
  • 8 slider buns
  • Toppings such as slaw, sriracha mayo, diced mango, lime wedges, picked red onions (recipe link in post above)

Instructions

  1. Put the ground chicken or pork, panko, carrots, green onions, soy sauce, ginger, garlic, sesame seeds, egg, kosher salt, and pepper in a bowl. Gently fold and combine with your hands until evenly mixed.

  2. Form into 8 meatballs and place on a baking sheet or casserole dish. The meatballs will be delicate which is normal. Sprinkle more sesame seeds over top and bake in a 400 degree oven for 27 to 32 minutes (chicken meatballs should be 165 degrees and pork should be 145 degrees).

  3. Toast the slider buns and make the sliders with toppings of choice such as slaw, sriracha mayo, mango, lime wedges to squeeze over top, and/or pickled red onions.

Note: I got an Asian salad kit and mixed with sriracha mayo, diced mango, and lime juice plus topped the sliders with more sriracha mayo.
