Cherry Coke Glazed Chicken
This easy, budget friendly, grilled Cherry Coke Glazed Chicken recipe was every bit as unique as tasty as it sounds!
I was literally driving one day and the recipe popped into my head.
Not sure why my mind works the way it does, but I’m pretty happy about it because this was amazing!
Using chicken thighs not only brings more flavor, they are quite cheap compared to chicken breasts.
How to Make Cherry Coke Glazed Chicken
The glaze is made by putting ketchup, Cherry Coke, brown sugar, worcestershire sauce, lime juice, kosher salt, pepper, and crushed red pepper flakes into a sauce pan.
As you can see it is very thin at first.
Bring this to a boil and then reduce the heat to medium low for 12 to 15 minutes.
Watch carefully as it comes to a boil, if it bubbles up just remove from the heat for a moment.
And stir it a few times throughout.
While the glaze is bubbling away and reducing on the stove, brush 6 to 8 boneless skinless chicken thighs with olive oil.
And season both sides with kosher salt, pepper, and crushed red pepper flakes.
The thin sauce from earlier transforms into a nice, thick glaze for the chicken.
After the glaze is finished, preheat your grill to medium high heat.
Once it’s good and hot, put the chicken right on the grill grates.
The chicken will cook about 4 to 6 minutes per side.
Brush the chicken with the Cherry Coke glaze a few times too.
Each layer of glaze will caramelize and give the chicken maximum flavor.
Gotta love those gorgeous char marks from the grill 🙂
YUM!
Serve Cherry Coke Glazed Chicken with the extra sauce on the side for dipping 🙂
