
Air Fried Ice Cream
This recipe for Air Fried Ice Cream is not actually fried at all!
I created a crispy, sweet coating just like the fried ice cream that we get at our favorite Mexican restaurant.
Then I toasted it in the air fryer and rolled it around some scoops of vanilla ice cream.
Super simple, but quite an amazing treat to enjoy at home!
How to Make Air Fried Ice Cream
Planning ahead is key here.
A few hours before serving, scoop some vanilla ice cream and place on a tray or plate.
It helps if the ice cream is slightly softened.
I went for some very large scoops.
Place the scoops in the freezer for at least an hour.

For the crunchy coating, put 2 1/2 cups of cornflake cereal in a gallon size plastic bag.

Use a rolling pin or cup to crush the cereal.
Then add in a tablespoon each sugar and brown sugar, half tablespoon ground cinnamon, and 2 tablespoons melted butter.

Toss the bag to make sure everything is evenly combined.
Then create a little bowl out of a sheet of foil, just fold and scrunch the sides in a bit.
Put the cereal mixture in the foil in the air fryer basket.

Set the air fryer to 400 degrees for 3 to 4 minutes.
Toss it a few times with a spoon so all sides get nice and toasted.

Let the coating cool completely.
Then roll the ice cream scoops on the coating, pressing so the coating sticks well.

I had a little of the coating left in the foil so I sprinkled it over top.
Back into the freezer for another hour and then these are ready to serve!

Serve Air Fried Ice Cream with toppings of choice like whipped cream and chocolate sauce 🙂

Caramel and sprinkles would be great too!

The bits of coating that were still on the tray I sprinkled over top as well.

Air Fried Ice Cream
Air Fried Ice Cream has a sweet, crunchy mixture toasted in the air fryer and then coated around scoops of vanilla ice cream
Ingredients
- 4 large scoops vanilla ice cream
- 2 1/2 cups cornflake cereal
- 1 Tbsp sugar
- 1 Tbsp brown sugar
- 1/2 Tbsp ground cinnamon
- 2 Tbsps melted butter
- Topping of choice such as chocolate sauce, caramel, sprinkles, and/ or whipped cream
Instructions

Let the ice cream soften slightly and scoop four large scoops and place them on a plate or tray. Put them in the freezer for an hour.

Put the cornflake cereal in a gallon size plastic bag. Use a rolling pin or cup to crush them. Add the sugar, brown sugar, cinnamon, and melted butter in the bag and toss until evenly mixed.

Take a piece of foil and fold the sides up like a shallow bowl. Put the cornflake mixture in the foil "bowl". Set the air fryer to 400 degrees for 3 to 4 minutes, stir/ mix a few times.

Let the cornflake mixture cool completely. Roll the ice cream scoops in the cornflake mixture, coating all sides well, pressing into the ice cream. Sprinkle any extras over top of the ice cream and place back in the freezer for another hour.

Serve with topping of choice such as chocolate sauce, caramel, sprinkles, and/ or whipped cream.
