Blackstone Sausage and Pepper Quesadillas are a super easy Blackstone griddle recipe, Italian sausage and peppers make perfect quesadillas

Ingredients
  • 1 pound Italian sausage links (mine were already cooked chicken sausage)
  • 2 bell peppers of choice (I used a yellow and orange)
  • 1 onion
  • 6 oz mushrooms
  • 4 cloves garlic
  • 1 Tbsp Italian seasoning
  • kosher salt, pepper, crushed red pepper flakes
  • vegetable oil for the griddle
  • 4 large burrito size tortillas
  • 16 slices provolone cheese
  • Optional: marinara sauce for dipping, banana peppers
Instructions
  1. Slice the Italian sausage into 1 inch pieces.

    Note: If your Italian sausage is not already cooked, cook 4 to 5 minutes per side in a skillet or on the Blackstone griddle set to medium heat. Let cool before slicing.

  2. Slice the bell peppers, onion, and mushrooms. Peel and mince the garlic. Put all the sliced veggies and sausage on a tray. Season with Italian seasoning, kosher salt, pepper, and crushed red pepper flakes.

  3. Preheat the Blackstone griddle to medium high heat. Once hot add vegetable oil and all of the seasoned veggies and Italian sausage.

  4. Cook 8 to 10 minutes, flipping and stirring a few times. Then move the sausage and veggies to one side of the griddle.

    Note: This works best with two hibachi spatulas.

  5. Lower the griddle heat to medium and add more vegetable oil to the empty space of the griddle and place the tortillas flat.

  6. Place two slices of the cheese on one side of each tortilla, then use the spatulas to put some sausage and veggies over the cheese, add two more slices of cheese over the sausage and veggies. Use the spatulas to fold the empty side of the tortillas over the filling.

  7. Flip the quesadillas and remove from the griddle once the cheese is melted and tortillas are cooked to your liking.

  8. Serve with marinara sauce for dipping and banana peppers if desired.
