Work smarter, not harder is the theme of this week’s meal plan. By prepping some of the ingredients ahead of time, it will cut down on the actual work around dinnertime 🙂

Simple Shredded Chicken for Meal Prep

My first trick is something I use quite often and that’s making shredded chicken and storing it in the fridge to use in more than one recipe throughout the week. This chicken is also great for snacking in between meals.

Buffalo Chicken Lettuce Wraps

This is the first meal where the shredded chicken will come in handy. Since the chicken is done, it will take about 5 minutes to throw this dinner together.

My teens will eat the lettuce wraps, but my eight year old would turn his nose up at these. Easy fix though…give kids a tortilla and regular shredded cheese and they can have buffalo chicken tacos 🙂

Chicken Bacon Ranch Tater Tot Casserole

This is the second dish that will use the shredded chicken. You could also make the bacon ahead of time of you prefer, making it even easier to prepare.

The kids could certainly help with making this meal as well, it’s basically a mix of ingredients and then into a casserole dish.

Steak Salad with Ginger Lime Dressing

The trick to making this dinner super quick is grilling the steak and preparing the dressing ahead of time. That way when it comes time to put these gorgeous salads together it takes less than five minutes.

We’ve been heading out to fish frys on Fridays since it’s Lent. But this Friday we will stay in and have our own fish fry! You’ll be surprised how simple and easy this one is 🙂
