You all know I love me some bang bang sauce, so I went with Air Fryer Bang Bang Shrimp Egg Rolls.
This is my second time using my air fryer to make egg rolls, and I guarantee there will be lots more times!
Cooked shrimp, broccoli slaw, and fresh cilantro is the filling along with some homemade bang bang sauce.
How to Make Air Fryer Bang Bang Shrimp Egg Rolls
I make the bang bang sauce by combining mayo (or light mayo), sweet Thai chili sauce, and Sriracha.
Just a little sauce goes into the filling, and the rest save to use as a dipping sauce.
Rolling egg rolls is pretty simple.
Just put some of the filling in the center of an egg roll wrapper.
Then dip your finger in some water and trace the edges.
This will help to seal the egg roll.
Fold in the sides over the filling.
And fold the front part over the filling.
And roll it up into an adorable egg roll like this 🙂
This recipe makes 12 total egg rolls, but you may have to air fry them in two batches depending on the size of your air fryer.
I did mine in two batches with my 5.8 quart air fryer.
Place 6 egg rolls in the air fryer basket and spray them lightly with olive oil spray.
Set the air fryer to 400 degrees for 6 minutes.
Next flip them and give another spray of the olive oil.
Continue cooking at 400 degrees for 6 to 7 more minutes.
Air Fryer Bang Bang Shrimp Egg Rolls are so crispy and crunchy and golden brown, just like deep fried!
The texture is slightly different compared to deep fried, but the amount of calories saved makes up for the difference.
Serve with the sweet and spicy bang bang sauce on the side for dipping 🙂

Air Fryer Bang Bang Shrimp Egg Rolls
Air Fryer Bang Bang Shrimp Egg Rolls are stuffed with shrimp, slaw, and a homemade bang bang sauce and cooked super crispy in the air fryer!
- 1/2 cup mayo (or light mayo)
- 1/3 cup sweet Thai chili sauce
- 2 Tbsps Sriracha (more or less according to spice preference)
- 1 pound cooked shrimp chopped
- 2 cups broccoli slaw (or cole slaw)
- 1/2 cup fresh cilantro chopped
- 12 egg roll wrappers
- olive oil cooking spray (I used Pam)
In a small bowl whisk together the mayo, sweet Thai chili sauce, and Sriracha to make the Bang Bang Sauce.
In another bowl add the cooked, chopped shrimp. broccoli slaw, chopped cilantro, and 1/4 cup of the Bang Bang Sauce. Stir until evenly mixed.
Lay an egg roll wrapper flat, diagonal with a corner facing you. Place some of the shrimp filling in the center of the wrapper. Dip your finger in water and trace around the edges of the wrapper. Fold the side in over the filling, fold the front part over the filling, and roll into an egg roll. Repeat with remaining egg rolls.

Place 6 egg rolls in the air fryer basket in a single layer, seam side down. Spray lightly with the olive oil cooking spray. Set the air fryer to 400 degrees for 6 minutes.
Flip the egg rolls, spray lightly with more olive oil spray and set the air fryer to 400 degrees for an additional 6 to 7 minutes. Repeat with remaining 6 egg rolls.
Serve with the remaining Bang Bang Sauce for dipping.
