A flavorful and easy fingerling potato side dish

Ingredients
  • 1 1/2 pounds fingerling potatoes
  • olive oil, kosher salt, pepper
  • 1 Tbsp garlic paste (or fresh minced garlic)
  • 1 Tbsp fresh minced rosemary
  • 1 Tbsp melted butter
Instructions
  1. Cut each fingerling potato in half lengthwise. Place in a bowl and drizzle with olive oil, add kosher salt, pepper, garlic paste, and fresh rosemary. Toss until evenly coated.

  2. Cook the potatoes in either the oven, grill, or pellet grill.

    Oven: Lay the potatoes cut side up on a lined baking sheet. Place in a 400 degree oven for 10 minutes. Flip the potatoes and bake for an additional 10 minutes. Turn the broiler on high for 2-4 minutes.

    Grill/ Pellet Grill: Place the potatoes cut side up on a grill set to low for 10 minutes, grill should be closed and temperature should be around 375-400 degrees. Flip them and close the grill for an additional 10 minutes. Turn the grill on medium or medium high for 2-4 minutes.

  3. Toss the potatoes with melted butter and more kosher salt, pepper, and/or rosemary if desired.
