This Hidden Veggie Spaghetti Sauce recipe hides a ton of veggies in what they THINK is just a typical spaghetti sauce.

Pulling a fast one on your family? Then THIS is the recipe for you!

As a mom I try to think of ways to get my kids to eat more veggies (kinda my husband too 😉 ).

Us moms can live on the edge be tricksters sometimes, right?!

It starts with all of these veggies that I pulse in a food processor in small batches, so they are so teeny tiny that no one notices.

You could finely chop them if a food processor is not a possibility.

Yes, this picture is steamy.

I cook for real and take pictures as I go as best I can.

Cook all the veggies in a large pot over medium heat for about 8 minutes.

Then add a pound of ground Italian turkey sausage.

Once the sausage is cooked with the veggies add some red wine.

This one is my favorite!

Plus you really can’t let the rest of a bottle of wine go to waste, so it’s the perfect plan to be like

“Oh, I guess I’ll HAVE to have a glass of wine (or two) with dinner” 😉

Hidden Veggie Spaghetti Sauce

Finally add a giant 66 oz jar of Ragu spaghetti sauce and some garlic powder, Italian seasoning, season salt, and fresh basil.

Let Hidden Veggie Spaghetti Sauce simmer away for about 20 minutes.

Taste for seasoning and add more kosher salt and pepper, season salt, garlic powder, or Italian seasoning according to your taste.

Serve with spaghetti or zucchini noodles.

Helpful hint to make your life easier…

This makes a HUGE batch, if you freeze the leftovers this is kind of like cooking two or three meals in one!

Hidden Veggie Spaghetti Sauce

Ingredients

  • 1 onion
  • 1 red bell pepper
  • 2 small zucchini (or 1 larger zucchini)
  • 2 small carrots (or 1 larger carrot)
  • 8 oz mushrooms
  • 4 oz fresh spinach
  • 5 cloves garlic
  • 2 Tbsps olive oil
  • kosher salt, pepper
  • 1 pound ground Italian turkey sausage
  • 1/2 cup red wine (optional)
  • 1 66 oz jar Ragu spaghetti sauce
  • 1/2 Tbsp garlic powder
  • 1/2 Tbsp Italian seasoning
  • 1/2 Tbsp season salt
  • 8 fresh basil leaves chopped

Instructions

  1. Finely chop the onion, bell pepper, zucchini, carrots, mushrooms, spinach, and garlic, or pulse them in small batches in a food processor.

  2. In a large pot over medium heat add the olive oil and chopped veggies. Season with kosher salt and pepper. Cook 8-10 minutes, stirring occasionally.

  3. Add the turkey sausage, cook 5-8 minutes, breaking it up as it cooks. Add the red wine and cook 3 more minutes, stirring occasionally.

  4. Add the Ragu sauce, garlic powder, Italian seasoning, season salt, and fresh basil along with more kosher salt and pepper to taste. Bring to a boil and reduce heat to simmer. Simmer 20 minutes, stirring occasionally.

  5. Taste for seasoning and add more garlic powder, Italian seasoning, season salt, kosher salt, and pepper according to your taste.

  6. Serve over spaghetti or zucchini noodles.
