Mexican Street Corn made super simple in the air fryer
Brush the corn with olive oil and sprinkle with kosher salt. Place in the air fryer basket.
Note: If corn is large, cut each ear in half so they fit in the air fryer basket. Depending on the size of your air fryer you may need to cook in two batches.
Set the air fryer for 10 minutes at 400 degrees, flip halfway through cook time.
While the corn cooks mix together the mayo, sour cream, garlic, chili powder, and a pinch of ground red pepper. Stir until evenly combined.
Remove the corn from the air fryer basket with tongs (they will be hot) and transfer to a tray or baking sheet. Brush the corn with the mayo mixture on all sides, then sprinkle with the crumbled cotija cheese.
Sprinkle more chili powder and cilantro over top and serve with fresh lime wedges.
